Let me get one thing straight: I still dream about the lamb shoulder I had here. It was just perfection, the meat so succulent, falling off the bone, in its delicious juices and with a crackly-crispy skin... just wow. Service was very friendly. The jamon as a starter was a delight, the tomato could have been more flavourful but I really enjoyed the wasabi-avocado cream and cured bonito it came with.

Update - 2nd visit, one year later: Having had cravings for the last year, I had to return - and the lamb shoulder is still one of the best things I have eaten. I also tried the delicious presa, and the outstanding leeks with a sauce I could have bathed in. Highly recommend the place, you really cannot miss it!

3rd visit: The restaurant, first of all, is beautiful and the service incredibly good (but it's been like this since I visited the first time three years ago). The food, especially the paletilla, has also always been incredible, and the reason I come back every year. This year, it was almost like it got even better: tartare - out of this world good. I am not sure I have eaten such a great one before. Mushrooms, especially if eaten with the egg yolk: pure comfort food in a bowl. Rodaballo: just spectacular, clearly the best I ever had. I loved how I could taste the fire, and smoke, and the sauce, the crispiness and bite of the skin... Sorry I don't get it. I mean, it's nice, the food is nice, the atmosphere and service as well. But it's overly complicated without real benefit and I actually didn't want to finish some plates even though the waiter kindly announced them to be their "star dish" (it doesn't happen to me, I was educated to finish my food).

I am sure there are other good plates, but overall, the mix of "fency-ness" (tight atmosphere, need to reserve, prices) with the actual taste of what we personally ordered didn't cut it for us. We were traveling north of Spain for a week, eating in basic to fency places (some even in the same village) and we enjoyed pretty much all of them more. I mean, the Basque area has many GREAT restaurants, so if you open a super fency one, it should be better, or at least tasty the same, not just more sophisticated.

I appreciate the effort and we ultimately enjoyed our time, so thank you. But I'm very sorry, next time I'd go to...

En primer lugar y antes de describir mi experiencia, decir que este lugar está totalmente recomendado y que espero volver a ir lo antes posible. Mi experiencia versa sobre un menu de carta de Fin de Semana.

El sitio es único y encantador, Sallent de Gállego en cualquier época del año invita a visitar y degustar en el una comida altoaragonesa exquisita, llena de matices y sobre todo, que combinados con una cocina contemporánea se puede crear una experiencia increíble que es lo que yo buscaba.

Elementos positivos: Comida muy elaborada, equilibrada, sorprendente, de alta calidad, a un buen precio y nada pretenciosa. Me refiero, combina muy bien diversas comidas e ingredientes a un lado y otro de los pirineos sin ser nada rimbombante que haga dudar de los platos. Todos los platos son reconocibles pero una vez servidos en mesa, sorprendentes. El servicio fue muy atento en la explicación, muy acertado en las sugerencias y consejos y siempre educados. El ambiente "sonoro" fue muy agradable, es decir, al no ser un amplio espacio no agobiaban las conversaciones de los comensales y en general, la experiencia fue de repetir y de recomendar.

Aspectos negativos: Siempre hay que elaborar una crítica constructiva que deba servir para mejorar, nunca para ofender. Me gustaría señalar que a pesar de ser las fechas que son (diciembre) y que estamos en Sallent y DEBE hacer frío, si bien en una primera parte de la comida había una chimenea de pellets que proporcionaba el calor adecuado (no pasaba nada por un par de grados más), en la segunda mitad de la comida se apagó. No sé si fue a propósito, si fue una petición de alguna mesa o fue un descuido. En cualquier caso y siendo una opinión totalmente personal, yo no me situaba muy lejos de ella y me quedé frío. Lo suficiente como para amargar levemente la experiencia. Simplemente un poco más de atención a este detalle y estaría de lujo.

Por otro lado, la comida se alargó un tiempo quizá excesivo. Si es debido a la elaboración al momento y la atención al detalle perfecto, de hecho, para mí mesa no tuvo mayor importancia porque no teníamos prisa. Pero si creo que podría llegar a suponer un problema para otro momento. Repito, la atención y educación de los compañeros que servían las mesas fue de 10 y los platos estaban en su punto, pero buscando una mejora si señalaría estos dos puntos.
