I understand that some of the dishes may be adapted to cater to those more grounded in European cuisine but I found the dishes here to only loosely resemble authentic Vietnamese food. The vegetables (or lack thereof) in the noodles didn't seem fresh and the pho broth lacked the richness of the beef bone broth and key ingredients that usually make pho (chillies, limes, bean sprouts, etc).
It was even more disappointing and felt less authentic when I was served the pho without chopsticks and had to use a fork to eat! The server/owner walked away as soon as he served the dishes before I could ask for chopsticks and we were already feeling quite uncomfortable with the service we had already received up to this point, so didn't feel welcome enough to ask. The restaurant was not busy at this time either so he was not under time pressure.
We observed his interactions with the few other tables and it was clear to see the stark difference in how he engaged with us and them. The other customers spoke the local language, so perhaps it was easier to communicate for him; but the restaurant is serving south east asian food so surely the owner appreciates other cultures too since he is advocating for it in this institution? We may have looked foreign (although learning about other cultures through language is common these days!) and you may have assumed we only spoke English and our native tongue, but had the owner bothered to interact a little, he would have known we could communicate in Spanish too.

Read moreIf the rude man with big belly is in the premises maybe is better if you just find a different place (nothing wrong with big bellies, I'm also getting there😂) his manners were horrible.
He stared at us at the table as we quickly started looking through the menu as it was getting closer to closing time. We weren't even sure he was the waiter at the point or just a patron given his state of dress.
He got upset because we came closer to the closing time and made a big deal because we sat down in the terrace without asking if the kitchen was open. He went inside to check if it was open and started muttering with other staff (kitchen was open and we told him to keep it all for themselves).
His manners were just arrogant and rude. Which is a shame as we really looked forward to trying...
