Having lived in Asia for several years, and having eaten at The Chedi Restaurant the night before, I went in with pretty high expectations. Regrettably, these expectations were not met. We did not stay the entire dinner and walked out an hour and a half into the service after we still had not received even a single dish of the main course and only a few very small appetizers, some of which amounted to little more than a shot of broth.

My companion, who had several serious food allergies, did not feel welcomed by the staff and did not feel his concerns were adequately met or addressed. While the staff were very professional by any standard, they were not personable and hardly approachable. The atmosphere was well enough, but felt very constrained. Neither my companion, who cannot drink, or I, who can but rarely chooses to, had any alcohol for this meal, but I strongly suspect pacing was too heavily reliant on this being chosen for those who selected the 5 or 6 course set menu.

Overall, the evening was very disappointing and I admit I was a bit disgusted by the staff as we were preparing to walk out, as their only defense was, "we are a Michelin Star restaurant!" I am sorry to inform you, that is meaningless when it comes to customer...

Stunning cuisine and excellent presentation. My recent visit at The Chedi Andermatt was pure joy with a dinner at The Japanese as my highlight.

I love the Modern Kaiseki-Kappo Menu concept. You can customize the menu to your needs and your taste. The staff is "extremely" polite, but just the right amount of kindness. Everyone is very competent and knows what he/she is doing. There was a bit of confusion about what we have ordered but they have immediately recognized it. It is great that everyone knew what to do when there were mistakes that I have noticed as well (e.g. you do not start cleaning the show kitchen when guests can see it). Thumbs up!!!

I do understand people who got upset because they got kicked out after the time run out. But that's how it works when the restaurant has two service times. I was lucky being able to stay in the restaurant after the official opening times to really enjoy everything.

Overall it was an amazing experience and I am looking forward to visiting The Chedi...

Very easily one of our favourite restaurants, and we will definitely return! We had an excellent 7-course menu with high-quality sourced ingredients, which were exceptionally well cooked and paired tastefully with beautiful porcelain. The pairing of Japanese sake with each course was exceptional—something new for myself. The staff are really outstanding, with a genuine willingness to engage with the guests and share their opinions. Their knowledge was remarkable, from the menu to the fermentation process of each sake or the origins of the cutlery. If they didn’t have an answer to a question initially, they made a point of finding out and returning with a very thorough answer. Furthermore, their fluency in English and German made it comfortable to communicate. The whole experience exceeds your expectations, and its 2 stars are well deserved. How does this have 1 Star??? NOT true japanese its Swiss fusion BS! Wagu with mash potato is WRONG, fresh oysters on celeriac mash is WRONG. The sushi/sashimi chef had PREcut all the fish and just assembled, this is not how to prepare! I've lived in Japan and this place is so wrong. SERVICE We arrived 4min early and was told to go away until exactly 8:30pm. What the? We were later sat at the end of the sushi counter, no other guests... 30min later the counter area was full and they were enjoying drinks and starters BUT we were still hadn't even got the wine list. A word to the manager whom agreed we had been forgotten but was surprisingly unapologetic. So disappointed.
