Süder — Restaurant in Bern

I'm a regular customer of this restaurant for 2 years and visiting this place is a good reason for me to travel to Bern. The place is very nice, the personnel is friendly and attentive, but most of all I love the food that goes with perfectly matching wine. In summer there is a terrace with a little garden, in winter the coziness inside helps just enjoy a great meal. We enjoyed a delicious 4 course set menu. The wine was lovely and the setting was cosy and intimate without being too much. There was a mixture of couples and small groups of people eating. The restaurant was very busy. I wish I had discovered this...

Dining at Suder was an absolute pleasure. The service was warm, attentive, and truly professional, with the staff effortlessly switching between fluent German and English to make us feel right at home. The food was a standout, fresh, flavorful, and served promptly, yet the experience never felt hurried. The prices were surprisingly reasonable for such high quality. Wir sassen auf der Veranda, im Wintergarten, draussen stürmte und regnete es. Zu Beginn wurden wir freundlich begrüsst, das Ambiente im Gastraum, wo man uns hinsetzte, war heimelig und gemütlich: Ein Schmaus für die Seele. Die Bedienung, eine sympathische Frau, nahm schnell unsere Apero-Bestellung auf - der Negroni schmeckte so, wie ich ihn mir gewünscht habe: Ausbalanciert, herb, edel und kühl.

Schon das Amuse-Bouche, schön macht man sie noch, hat uns überzeugt: Dünne Bratentranchen auf Süsskartoffelpüree (ich hoffe, ich erinnere mich recht) und Zwiebelchutney. Jedenfalls optisch, geschmacklich und auch von der Temperatur her genial.

Während der Regen die Fensterfronten herunterlief und die Blätter wild im Wind flatterten, wurde der erste Gang serviert: Ein Tatar, mittelscharf: So wie ich es bestellt habe, wurde es auch serviert. Die Portion riesig! Zum Hauptgang habe ich mir die Pouletbrust bestellt, mit Chorizo-Sauce, selbst gemachten Tagliatellen und Spargeln, grün und weiss. Die Spargeln perfekt gegart und die Aromen perfekt aufeinander abgestimmt.

Zum Dessert: Eine Kugel Caramel / Meersalz und Tonka, hausgemacht versteht sich. Die Konsistenz zart-cremig, weder zu süss noch zu fade.

Es ist schön, dass wir noch Vollblut-Gastronomen haben, die sich diese Mühe auf sich nehmen, um diese Art von Gastronomie weiterhin zu betreiben. Klassisch, überzeugend, kompetent, mit Liebe und Hingabe für die Gäste.
