Firstly, this is Switzerland, not the US or Dubai (thank God). You want the obsequious deference you received in L.A. or Dubai, stay in L.A. or Dubai. But I'm quite sure that if you arrive in either location with your arrogance, chances are you will be met with same treatment. The local Perch fillets are a seasonal catch. If you care to ask, staff will disclose the origin. Whether Geneva lake or Eastern Europe. Regardless, Perch fillets are only tasty because of the frying and whatever sauce is served. Period. The fish itself has hardly any taste or aroma. So, yes, as such it's a largely overrated plate 😊 and debating who has the best Perch fillets in Geneva is a century-long debate never resolved. It all depends on the mood. Fish fillets can accidentally be overcooked. Just point it out and ask a new preparation. Finally, the location is small, very demanded and, since it is open roof, quite weather-sensitive. Reservations well in advance are a must. As for the attitude of the staff, yes they have a personality. That's why we like the place. If you prefer it the other way, read my comment about Dubai above. The staff are always friendly and have a wide variety of drinks there as well as chairs and tables on the grass nearby if you don't want to sit in the bar/restaurant area.
