I am comparing the experience based on the price I pay. Food wise, it was creative and beautifully presented. The use of ingredients was matching well for each dish. What I like the most is the use of rice crackers on the fish skin. The crispy rice pieces combined with the fish gives an awesome crispy texture that went beyond expectation. However the edamame underneath the fish became overcooked.
In overall, I was served starter, second course, main course and dessert. The starter itself hit a high note directly and was very pleasant. However the second and main course stagnates and did not improve much compared to the starter. In my opinion, there should be a progressive increase of experience. On the other hand, there a a few repeats of the same decorating ingredients such as pickled carrot, tomato/paprika puree and green oil. This green oil is however slightly different in each dish but having the same exact color so I am not sure if they are made from the same ingredients. If ingredients are different then the color should also differ so as not to give the impression of repetition which can be a disappointment. Service wise, I was greeted directly upon entry and was introduced the menu immediately. I personally appreciate this high level of welcome. It was nice that every dishes were explained in detail. However the disappointment comes when each courses were served at least 10-15 minutes after the end of each course. The worst is the dessert being served after 30 minutes of waiting from the main course. In total I was in the restaurant from 6.30 till 9.30. It is way too long for a 4 course meal. Dishes should be served maximum 5 minutes after the end of each course so the appetite is not lost. Too bad there were no one standing by to check who was done and not. To be fair, the dessert was pretty impressive as the texture and temperature of ingredients highly varied in a single plate, giving a sense of adventure to end the meal, but I think this feeling should be given during the second course. One of my top 5 restaurants in Zürich — hands down. From the first sip of Champagne & Negroni to the final bite of Margadise, this meal was an elegant, joyful rollercoaster of flavour.
We started with beautiful amuse-bouches, sourdough with celery root cream cheese (I may have fallen in love), and a ring of pickled veg in beurre blanc that made vegetables feel glamorous.
Then came The Aubergine Experience™ — layered textures with black garlic, wild garlic, lemongrass sauce… mamma mia.
Poached zander with gnocchi and green pea purée followed — delicate, bright, and comfortingly perfect.
Next: breadcrumb-crusted veal (Kalbsrücken), rich beef tartare, polenta, and airy Maisschaum — the chef showing off, and we were here for it.
Dessert was a vanilla cream base with rhubarb in all the textures and sweet fennel on top — like spring in a spoon.
And just when we thought it was over: Margadise. A schuh pastry with vanilla cream, zesty lemon tartlet, and a dark chocolate truffle. We nearly applauded.
