Had a rather disappointing experience at this tsukemen restaurant near the back of NTU main campus.
When entering, a staff member instructed us to sanitize our hands and order on the kiosk. He was also patient in explaining the differences between each option. Unfortunately, there was no English option on the kiosk. You can order regular ($290 NT) or more meat ($330), and choose the amount of noodles you want - small (half a ball), medium (one ball), and large (1.5 balls). After ordering, we were seated but the table had a weird, musty smell. We realized that they were using an old, nasty rag to “clean” each table after a customer left, and the odor was both strong and unappealing to smell before dining.
The tsukemen came out rather quick, which was good. However, the soup base was relatively thin and not as thick as I’ve had in the past. This isn’t a big issue, but the soup lacked flavor. I’d also recommend getting the large amount of noodles if you’re thinking of the medium, as their measurement might be smaller than you think.
We also ordered the gyoza, but one of them was undercooked and the meat inside was still pink. The other five were perfectly fine though.

壹の穴成長拓張的速度很快,目前已經有3間分店: 『麵屋壹の穴、麵屋壹慶、麵屋壹の穴ichi-沾麵專門店』。
而這次第4間分店主打的是相對較少選擇的[沾麵]!
我自己的偏好是沾麵>拉麵,如果有同時這兩種品項可以選擇,我是會選沾麵的人。所以很好奇這次沾麵重新復活而且變成獨立店的呈現會是什麼樣子。
壹の穴很早期的時候沾麵其實是定番的,但是後來種種因素拿掉之後就一直沒有下文...
碗都不知道敲破幾百個了,好在復活了但是卻變成獨立的店來販售。
沾麵專門店其實相對辛苦,因為沾麵麵體關係,在製作上相對拉麵耗時,有很多後續的效應問題產生(等待時間過程、用餐時間過久、翻桌慢...等)。
這兩天試營運的時間社團上的食記都有被提到這些問題,這就是沾麵店本身無法避免的狀況;所以沾麵店才相對少畢竟吃力不討好,想改善上面這些問題其實也要靠麵友一起才有辦法。
店內座位數20左右(有可能會調整),有吧檯和4人桌。 然後店內提供無糖麥茶、水兩種選擇,自行取用。
整體吃完,我是滿意的,有展現店主自己的特色和新的食材使用!不過還是有些小缺點可以再改進,後續正式營運也能夠穩定的話,會是沾麵愛好者的好選擇~...
Read moreBeautiful presentation, chicken prefect texture and the pork tastes like a ham of some sort, not sure. Noodles are nice and thick to pick up broth and egg perfectly cooked, firmed up but still runny like lava. The tomato is excellent; really sweet, must be pickled in sugar. Broth was very good, maybe needed a touch more salt.
Overall one of my favorite tsukemen bowls! Great attention to detail and flavors are excellent!
