八丼手作日式料理 — Restaurant in Hualien City

Redoing my review because the last one wasn’t in-depth enough to warrant a response from the owner besides an emoji.

I came here on a Thursday evening. The restaurant was surprisingly full given the quality of its offerings. I ordered the vegetable tempura, taro sushi, and California roll.

The tempura was crisp but the vegetables were virtually flavorless. The dipping sauce was equally under-seasoned.

The taro roll and California roll epitomized the Taiwanese debasing of Japanese food. I find it hilarious that this restaurant claims to be Japanese cuisine (日本料理).

The outside of the taro roll was an unnervingly sweet taro paste. The roll included mayonnaise and pork floss inside, adding to the sickening sweetness of this “sushi”. Can it even be called sushi if there isn’t any rice?

The California roll barely resembled any California roll I have ever eaten. It also was filled with mayonnaise (again), flavorless shredded cabbage, cheap hotpot crab stick and egg with shrimp (火鍋料) as well as a minuscule slice of cucumber. This abomination was only made worse by covering the rice in bonita flakes (柴魚).

Both pieces of sushi had plastic wrap left on the outside. Is this seriously a restaurant or a cheap roadside stall in a market?

My friend’s udon noodles were watery and under-seasoned.

When I asked for wasabi, I had to flag down another server when the first person I asked never brought it.

Needless to say, I didn’t finish my food. The best thing I ate here was the ginger served...

The food here was good, and came in generous portions. We actually ordered more food than the two of us could eat. 😅

The salmon sashimi was fresh, juicy and came in thick slices.

The garlic clam soup was delicious with generous servicing of clams and garlic in it.

The stired fried seasonal vegetables was the highlight for us. The vegetables was really fresh and stired fried just nicely.

For the rest, as we really ordered too much, by the time we could get to them, either some of the dishes turned cold or we were too full to savour them properly.

It will not do them any justice if we would to really rate them. All in all, the rest of the dishes are...

知道這裡好一段時間了，今晚是第一次和家人光顧，之前始終沒來吃是因為自己其實蠻抗拒「名店」（身為在地人，過去吃過不少別人口中的花蓮「名店」踩了不少雷、也翻過很多白眼）。

先說評價，以這個價位對比它的品質和服務，絕對有四點五到五顆星。

先說缺點，「鮮蝦手卷」送上來時我心裡有嘀咕了一下：這看起來也太寒酸！蝦子只有一隻而且尺寸有點營養不良；雖然可以理解售價五十元扣掉食材成本可能利潤很少，但理解歸理解，觀感總是不那麼好、而且也會影響手卷整體口感。

另一個缺點就是茶碗蒸稍微比較沒有滋味、但蒸蛋本身是處理得很好的、很綿密。

然後就沒有了，對！至少我們點的一桌裡面就沒有什麼缺點了。

如果是學生或健身完想要吃粗飽的肉和飯，真的強烈推薦它的「豬排丼」！！！送上來的時候把我們嚇一跳，超級大一碗而且豬排本人的份量幾乎是很多日料店豬排的足足兩倍多（照片中的豬排丼是已經被我們吃掉三大塊了才拍的）。

「土瓶蒸」好喝，湯頭濃郁鮮甜又不會有那種死鹹或是膩口的感覺，個人大愛！

另外我們也點了「炸魚天婦羅」，也是另一個我和家人一致大愛的品項，份量給的很有誠意，印象中整盤大約十個左右的炸物裡、炸魚應該就有四到五個；而且除了魚本身夠新鮮，麵衣本身也絕對是亮點（炸得恰到好處而且吃起來很細緻很好入口、也不會像有些炸物比較粗糙會去刺到或戳到嘴巴肉）。

「炸蝦丼」的表現也同上，猜想他們對炸物的處理真的有維持一定的水準。

「北海道干貝甜蝦丼」、「鮭魚親子丼」、「三色鮮魚丼」這三個一起講，壽司飯本人比較中規中矩（比一般的醋飯甜一點）甜蝦真的清甜而且新鮮！！（因為本人只要吃到稍微不新鮮的蝦，不到一分鐘嘴唇就會腫成迷唇姐，屢試不爽。）厚切的鮭魚生魚片肉質十分彈嫩、不會爛爛散散的，鮭魚卵也很有彈性、會啪一聲爆開的那種，搭配調味比較濃稠的龍蝦沙拉和帶一點甜味口感的玉子燒吃起來清爽又不膩；很適合這樣的夏天晚餐。

「綜合壽司」裡其中用芋泥做的壽司深得我家人的心，味道真的蠻獨特的，喜歡吃芋頭的人很推薦要點。

最後是今晚的「炒鮮蔬」，用蕈菇炒水璉、調味一樣處理的很好，保有適當的爽脆度也不會過軟爛。

然後服務人員手腳很俐落，常常才剛吃完放旁邊的碗盤就會來收走，態度也很親切讓人覺得自在舒服。

最有趣的是，因為我們坐的桌子在壽司師傅窗口的正前方，用餐到一半當場內幾乎所有客人的料理都上桌了以後、發現有位師傅（猜想可能是大師傅）一直透過窗口不斷悄悄的在觀察外場所有客人的用餐狀況；前後斷斷續續大約有二十幾分鐘！感覺很像是在觀察客人用餐時的表情或是對料理的評價。

總覺得這一點很可愛，自己過去同樣在經營餐飲店，總覺得這種真心在意自己製作出來料理的評價的人對待客人相對是真的比較用心的。

我很少很少很少會想對一間店留下評價，幾十年來不知道有沒有十次（？），但今天晚上的用餐經驗讓我們全家人都感到很愉快，尤其是最後師傅偷偷觀察那一幕，真的讓我有種莫名的認同，所以分享了自己的這段經驗給還沒去過或有打算要去吃吃看的人，個人認...
