到一家店吃飯,除了餐點要好吃外,也要體會及感受到店家開店的精神及靈魂。寫食記都是自發性想用文字來表達餐點的內容及情境分享給好友,沒有指定也不接受業配,這一次例外。同行的友人希望能加入食材之外的感受及南台灣人對於”人客”的熱情,也分享對於用餐的必要的堅持。趁著店內客人正在忙的煮食材的空檔,和老板討教討教。寫下店家對客人的熱情,對食材的堅持,對傳統口味的守護及固執。 不起眼的店面,不太接受採訪的小店,只有不到十張的桌子,曾在屏東當縣長的院長不久之前在這裡招待七十多人。屏東人口中專賣屏東火鍋的店,盛食材的盤子讓我想起老家中所在用的,仿佛不久之前才打破的那個盤子,記憶猶新到耳朵都好像聽到掉落在地上清脆響亮的聲音,著實感觸良深也有夠古早。 數十年的堅持使用在特別的食材: 沙茶醬加了一定比例的花生粉每天調製,就連調味用的辛香料都是新鮮準備,不假它人之手,以調出特別屬於屏東人的口味。 湯底是使用黑毛豬的大骨,絶不使用價格較低及淋巴腺及脂肪較高的豬頭骨。上桌面再加入炸過的扁魚及蝦米及冬菜,又點像汕頭可是又多了海鮮味及古早味的湯頭,這是店家傳統的好味道。 鵝血糕,市面不常見,口感更彈牙且更不會有雜味。 豬肉現點現切,沒有灌水也沒有熟成,口感是Q彈,耐煮。 海鮮都是在地好食材,蚵仔圓潤豐滿,蛤蜊肥厚鮮美,花枝口感絶佳。 紅茶是傳統的用心好味道。 什麼是用餐的必要的堅持?吃火鍋到最後,一定要撒上一把傳統手工麵,耐煮不爛,吸收了湯汁再加上沙茶,真正的好質地及好味道的東西作完成的結束,不是生理上的吃不飽而是精神上需要這麼作,才能讓生理達到滿載而歸記起回家的路。 結帳時的白板上的數字絶對公開透明,童叟供欺。 傳統的好味道,總是怕下手不夠讓客人覺得味道不夠深度不足,以現代人的飮食而言可以提醒店下手輕一點也不錯。
