Got the ramen with short ribs, tendon, and brisket. I also had the medium rare beef ramen on a separate occasion. They only have one type of broth which is very beefy, savory, and not too heavy or oily. You can select the toppings from a variety of beef cuts. Every beef topping I've tried was amazing. They were all tender and meaty but still with a noticable difference in texture and flavor among the different cuts. The tea egg that comes with the ramen is also amazing. This ramen is more of a beef noodle soup differntiating it from the typical japanese ramen that has different broths like tonkotsu, shio, shoyu, and miso. The ramen itself was nicely cooked with a good texture, and the broth was decent too. The smoked beef brisket, however, was a bit too salty and not as tender as I would hoped. On the flip side, the beef tendon was excellent—super tender and almost melt-in-your-mouth.
