Got the ramen with short ribs, tendon, and brisket. I also had the medium rare beef ramen on a separate occasion. They only have one type of broth which is very beefy, savory, and not too heavy or oily. You can select the toppings from a variety of beef cuts. Every beef topping I've tried was amazing. They were all tender and meaty but still with a noticable difference in texture and flavor among the different cuts. The tea egg that comes with the ramen is also amazing. This ramen is more of a beef noodle soup differntiating it from the typical japanese ramen that has different broths like tonkotsu, shio, shoyu, and miso. Definitely a must try as a ramen lover especially when you want to try something a bit different from the usual japanese ramen but still captures the joyful experience of eating a flavorful bowl of ramen.

I really like the ambience of the shop, it reminded me of Japan since you get to sit around the chefs as they cook your ramen fresh and serve it straight to you. The ramen itself was nicely cooked with a good texture, and the broth was decent too. The smoked beef brisket, however, was a bit too salty and not as tender as I would hoped. On the flip side, the beef tendon was excellent—super tender and almost melt-in-your-mouth. The cold tofu was simple but surprisingly tasty, while the scallop salad was just okay, nothing too memorable. Seating is quite limited, so I would recommend making a reservation before heading down.

晚下班的人要找吃的真的是很難找,排除小吃類(油炸、滷味、麥當勞……),所以seefood我分享的大部分都是深夜食堂。 今天不意外的下班找吃的,沙鹿深夜食堂能吃的我們都很常吃,今天碰巧3太子不在,於是載著太后開著車四處尋寶,從沙鹿找到大肚,再從大肚找到東海,再從中工三路找到國安一路。 一路上大品牌林立(屋馬、築間……)但那都不是我們的目標,seefood一向喜歡巷弄美食,那種能當正餐吃,又能常吃,最重要是我們下班還沒打烊的。 路過國安市場勾起了我們路邊擺攤的回憶,當然這時間23:00肯定是一片黑鴉鴉,但就有一家萬綠叢中一點紅,黑暗中的一盞明燈,一間不但亮,而且裝潢的頗有個性的一家店[牛肉拉麵]閃過我的眼角,隨即找了位置停車,走過去看仔細。 停車建議可以停國安二路,路邊有停車隔,市場後方還有停車場,半小時10元,在台中市真低便宜,停好懶得走還可以騎Ubike,但這麼近實在也不用懶到這種程度。 外觀就能看出業主的用心和職人精神,乾淨整潔明亮,完全沒辦法和市場聯想在一起,想必花了不少錢裝潢,內部天花板噴黑遮醜,再釘上木紋格柵,牆面也同樣是木質風格,加上少許壁畫裝飾,非常有自我風格,想必老闆內心也有少許的動漫魂。 菜單簡單藍底白字列印護貝,細心的加上英文翻譯,價位從100多到500都有,入座先招待一杯無糖紅茶,有冰熱兩種,第一次來會有詳細的介紹,牛肉種類大約五種,不吃牛有雞肉可以選擇,每樣都會有點微辣,更能選擇1~5級辣度,上桌後湯頭濃清都能再做調整。 我們點了常用在較高單價的牛排或是燒肉的翼板牛為主的半熟牛拉麵,以及單價最高的地表最強拉麵,只要是第一次光顧的店,我都會點單價最高的,因為如果單價最高還難吃,其他也不用嘗試,一次定生死。 經解說,地表最強拉麵是一次放入煙燻、牛筋、牛肋條、牛腱、半熟肉翼板,5種牛肉料理,根本大絕! 原本覺得牛肉麵就牛肉麵,美其名牛肉拉麵,在親眼目睹並吃了一口麵之後,只能說這麵超越拉麵,更不用說牛肉麵,麵條採用拉麵的細麵,口感真的有別於日常吃的麵條,不但軟硬適中,咬下去真的第一次體會到什麼叫彈牙,Q中帶脆,好像咬斷一把橡皮筋的感覺(請原諒我用這麼不好吃的形容詞),食用前和湯汁拌勻,充分吸收夾雜在麵裡,不會麵是麵湯是湯的口感。 牛筋滷到軟爛,真正留下膠質。 牛腱更是半筋半肉軟爛卻不鬆散乾柴。 肋條充分發揮油脂和肉結合該有的水準,半熟翼板吃得出牛肉原汁原味的鮮甜,類似於台南牛肉湯的味道。 較不討喜的是煙燻肉,雖然香氣充足,但選用胸腹的部位,筋感較重,肉質較扎實。 湯頭太后覺得可以再清淡,但沒有請老闆調整,因為也沒有到很鹹,應該有用八角、肉桂、五香等重要調味,屬於偏重口味,香氣十足。 整體來說給五顆星,非常佩服老闆能在這麼狹小的空間,做出這樣的料理,設備選用也很講究,直接放入口袋名單。 硬要說缺點,吧台約7個座位加上兩張四人桌,用餐時間應該很容易客滿,下次嘗試外帶看看能保留幾分。 (也有foodpada可以訂,但我建議支持店家就不要透過平台高額抽傭)

The ramen itself was nicely cooked with a good texture, and the broth was decent too. The smoked beef brisket, however, was a bit too salty and not as tender as I would hoped. On the flip side, the beef tendon was excellent—super tender and almost melt-in-your-mouth. B- [it's aight / 還可以]

· its a hidden restaurant near M plaza (proclaiming to be best beef ramen restaurant in Taiwan)

· the front staff attitude was not friendly + never explained what their menu offered

· free ice tea but stingy on the refill

· substituted wood ear for more lettuce + green onion

· standard chewy ramen noodles (can order more for 30 NTD as of May 2025)

· their beef chunks had good texture but has a strong beefy taste (i didnt like the flavor)

· their special spicy paste was really flavorful in soup (best highlight here but...)

· its spicy paste from an udon restaurant nearby and not homemade

tldr: its a taiwanese + japanese fusion ramen restaurant thats worth a...
