Hakka cuisine (客家菜) is the cooking style of the Hakka people from parts of Taiwan and various parts of Asia. I am part Hakka from my dad's side of the family and it's great to experience their cuisine on my trip. The cuisine concentrates on the texture of food where meats and vegetables are preserved then steamed or braised. The skill in Hakka cuisine lies in the ability to cook food thoroughly without hardening it, and to naturally bring out the umami taste of the food. 來吃母親節聚餐,餐點部分口味的還可以給兩顆星。

直接先說結論;這是一家完全沒有服務態度跟熱誠,然後桌子非常小,大概超過8人就會顯得擁擠,然後不會把客人需求當成一回事的餐廳,或許是在地開很久,顧客大多數都是中老年人也不缺客人態度才這樣;如果單純吃飯不用有其他要求還算能接受。

話說,千暉鵝肉店成立於1985年,早期為路邊攤,2001年,原老闆退休後由現任老闆接手迄今,金融海嘯期間憑客家人硬頸精神撐過。走過30個年頭,口味始終不變,許多到外地發展的鄉親返鄉時,都會來嚐嚐記憶中的味道。 其次,千暉鵝肉店定位為平價、經濟、實惠的傳統客家餐廳,以原味家常菜為主,但也加入部分海鮮料理,老闆20年前曾於龍和大飯店服務,由學徒作起,亦曾於中信飯店服務,資歷完整,談到拿手料理,充滿自信。 尤其,千暉鵝肉店招牌菜《客家小炒》用的是阿根廷魷魚,剪成厚厚塊狀、泡水至軟硬適中,咬下去可嚐到大海的鮮味,搭配爆香後的蔥、芹菜、豆干及肥瘦恰到好處的三層肉,常有客人說跟別家不一樣。 另外,還有一道很受喜愛的料理《炒米苔目》,選用純米製作,加上蝦米、韭菜,淋上鵝肉湯汁後再炒,也可煮成米苔目湯,鄰近中壢高中或中央大學的同學常外帶。 最後,用來當作招待小菜的《拔絲地瓜》,選用南部高品質地瓜,切成大小適中後再炸,再以白砂糖炒過,食用前,沾些冰水,外脆內軟,是享用客家美食後最佳甜點,也是最甜美的句點。
