This Vietnamese delicacy caught my eye

Deep within the Tao Yuan night market, this pan-fried batter that looks like a UFO in shape and the shrimp is in the driver seat, topped with spring onion and spices, served with raw lettuce, shredded green papaya and basil. Tipped with condiments like fish sauce and fresh chili.

One bite in, the greasiness of the shrimp cake is taken away by the fresh greens and the zing from the fish sauce and fresh chili (beware of the chili it is dangerously hot!), well balanced and refreshing meal!

Whoa, like, where had you been all these years? The many times I've been to the Taoyuan Night Market, I never knew this place even existed. It's unfortunately almost hidden away in the far back end of the night market, and I missed it every single time. But damn, this place was DELICIOUS.
