Read more下午因為飢餓與貧窮,以及其他餐廳都關的緣故,因緣際會來到靠近五結的小餐廳——東京餃子,雖說店名叫餃子,但實際上賣的是辛擔麵,也就是日式化的四川擔擔麵,只是老闆取名辛擔麵,可以說它既不四川、也不日本,卻又不能簡單的稱為台式拉麵。
其實該店說的辛擔麵既不是傳統意義上的拉麵,也不是台灣口味的擔擔麵,更確切地說,是四川擔擔麵結合日本拉麵麵條與湯頭,再加上台灣本土材料的結果。
它既有四川擔擔麵,辣且香氣濃郁的特色,又有日式拉麵湯底香醇、麵條柔韌細緻的特點,同時佐料三星蔥、蔬菜的甜味不會過分掩蓋麵本身,也在味蕾感受下添增了一份別緻的滋味。煮麵人應該頗為用心,也或者是意外的發現造就了這碗麵。
以我點的赤湯招牌辛擔麵來說,湯頭柔和了各種調料與食材香氣,既濃郁也辣、香、甜,雖然有些許鹹卻又不過分,雖有辣卻又不像四川擔擔麵,麻辣將麵本身過度掩蓋;麵細長,吃起來富有彈性、韌性,不會過度軟爛,很適合用吃日式拉麵的那種「すすり」般的吃法,一口爽快的吃起,麵除本身特色外也很好地吸收的湯汁,單吃口感十足,加入湯一起吃則口感更豐富;佐料有蔬菜、溏心蛋、蔥、肉末,單吃雖無什麼特別,卻可以和湯麵混一起享用,增加食物的層次。
最後點名稱讚音樂,播放的是昭和演歌曲目,對於喜愛者而言,能聽到五輪真弓的戀人よ、北島三郎的盃和千昌夫的北国の春,確實給用餐增加了日式情調。至於用餐環境雖然不大,但也足夠30個客人大啖美味了。
建議來此的人不妨試試敝人吃法:先喝湯、後償麵,接著混入湯一起品嚐,在都嘗過佐料後,混合麵、湯一起品嚐,再把湯一飲而盡(請斟酌食量),並要一杯冰水做最後的收尾(冰水對於熱騰騰的日式拉麵必不可少),那就太好了!
