4.5 stars. Service was under 4m. I ordered the miso, which turned out to be the lighter white miso. Soup and noodles are standard, but the chashu was first rate, so good that I’d just order a bowl of rice with the chashu and scallions on top.
I ordered hard noodles which helped a bit, but mouth feel is a bit off compared to Hakata style noodles in Japan. But I don’t know what to say: Tonkotsu soup says you need thin, hard Hakata noodles, but Hokkaido miso says you need thick soup and thick, fat noodles. This was in between. Soup wasn’t salty enough, but combined with the savory chashu, it was pretty much spot on. Skip the egg as an add-on, it’s overcooked.
Chashu was the star of the show, a bit charred, with just the right amount of fat for melt-in-your mouth goodness. Cash only, no cc accepted.
20130706 Update: I ordered the medium spicy (strangely named 小辣), which turned out to be too much heat for me. If you want to try it, I recommend the 微辣. The level of savoriness has improved, but the noodles are still the weakest part of the bowl. 1 portion of extra noodles is too much. Next time, I’ll try a 1/2 portion with 200cc...
