Chef Boss has a good knowledge of Michelin restaurant operation and his passion for clean and fresh produce is hard to find among chef nowadays. For this , he has his own green farm which he sources freshly right beside his restaurant and also fresh daily seafood from local. His western technique of aging and fusion with local herbs and taste is also quite exceptional in Thailand as well. It has been over 1 month since I dined there , but I could still remember his Duck and the dried age wagyu jerky ( must try ) . Very few restaurant actually hold that reputation of keeping that taste bud memory! The hand made pasta with Ra- Waeng Thai Curry was a good combination of savory ( coconut foam ) and a slight kick from curry that will really satisfy your taste bud. The pasta comes with Dry aged Salmon that is done perfectly with crust on the outside and still moist and pink inside . The Black Ink Squid pasta is also worth the shot as well! The original menu offer many mouth-watering choices in abundance. I'd say that I was greatly entertained and excited on which dish will be served one after another asking them to do it in "Omakase-style". Food-wise, it was 5/5 as there was nothing that wasn't delicious, though, I'd like to really call out to 2 dishes which were the local Surat oyster and the Thai southern spice curry soup. The raw-fresh Surat oyster from this restaurant and the way they pre-process / prepared it really cleaned off all the defects commonly known in the Surat oyster (i.e. bad smell and creamy yet unpleasant mouthfeel). The oyster being so clean, you could really enjoy it anyhow you'd like it but the restaurant's specially prepared seafood sauce really best paired with it, in my opinion. As for the spice curry soup, there were these huge fish roes in the soup which were almost like Ikura (salmon's roe) on steroids, and they were also very clean. The skin of the roe was so crisp, and the internal bits were really juicily clean.
