These Thai chefs adopt that western style of greeting the customers and explaining the cooking process of the dishes. Normally it is the pastry chef who always comes out and talk to the customers. The executive chef is always busy in the open kitchen placed in front of the restaurant. When you walk through the door you will definitely see him chop the ingredients or garnish dishes with his helpers. The food comes with style and simple-but-elegant decorations. You can't expect Thai food here like the ones you've seen and tasted at a street market. These chefs are meticulous. Last night I had the ten course tasting menu, each dish is nuanced and balanced, bringing local ingredients to the forefront. If I had to pick my favourite dish of the night, it would to be the "Grilled River prawn/Prawn head Jawe Bong". The delicacy of lychee coupled with an incredible jawe bong and the flavours of the grilled prawn - just beautiful.
