Had a long chat with the staff here, I was told their ingredients were all as freshly sourced as possible and also always prepared fresh for each day/order as possible. Anyone can easily claim this, but it's rarely backed up by quality and taste that we can distinguish. I'm happy to say this place CAN back up their claim and what I consumed reflected this.
I tried the chicken Tikka fried rice, a chicken wrap with a sugar free bubble milk tea.
Immediately I could tell the difference in flavour with the rice. Admittedly, it took me a while to get used to not having that oppressive chemical oil flavour which is so synonymous with fried rice here while also oddly addictive, but once I did adapt, the nuance of subtle flavours started to show itself. Combined with a lovely fluffy texture led to a far more satisfying and fulfilling dish than we'd typically get, owing to the lack of oil and clearly fresh ingredients. It really does make a difference. Similar was the wrap, which was slightly more generic in flavour owing to the typical flavours of fried chicken and mayo, but there is only so much you can do with this combination so do not hold that against the chef. But how it did stand out was the great balance of taste, which wasn't overpowering like your typical British habit of drowning something in a single sauce/flavour as is so common here. Taste was satisfying, and again, the ingredients distinctly fresh.
As for the milk tea...just try it. They have a variety of types and flavours. But if you're like me and just prefer the standard no-frills classic style, you won't be disappointed. The flavour is strong and unique, and grows on you more and more as you drink it. I really felt like I was consuming a proper tea drink as opposed to a generic watery milk with a small tea flavour in the background that you get at the other places here. I'll definitely be coming back for more. The tapioca was also exceptional compared the other shops, freshly made on the day I was informed, and you really can tell. It's a small thing but makes a big difference. Also the cheapest place for milk tea that I've found in Sunderland so far. £4 for a large, which is about as much as I would consider reasonable for what you get.
I know I probably come across as a bit pretentious with this long-winded mini review, but I think it's needed because this place does appear to be exceptional in its quality, which is not an easy thing to do in an age where we customers are so used to consuming processed thrown-together slop for food and know no better. So the detail and care given in writing this description is to mirror the time and care they clearly put in to creating and preparing quality for us to enjoy. As customers we need to reward and promote this attitude and its result for all our mutual benefits.
The reality of using fresh ingredients and minimising the processed crap we're all so used to is that the taste experience often won't jump out at you immediately, but is instead more complex, nuanced and takes its time to emerge. It's a hard thing to put into words, but it's 100x better and more fulfilling. These guys seem to get that, so I recommend you give them a try. And if you do, pay attention to how you actually feel satisfaction and fullness from what you've had thanks to the choices this place makes. Your brain, body, and ultimately your wallet, will appreciate it.
