Upon stepping into the world that is Betsy, one is met with caramel tones and a lovely open fun energy. Flames in the center of the space are well tamed by the cuisine artists who are working to make this food truly beautiful for us who are present. The menu is a perfect amount of items and the design of the menu is smart as it's just one long list blending from the top of the meal all the way thru the entrees into the desert options. Everything pairs well with everything and that's very smart. We shared and were inspired to share the Goat cheese plate / the tomatoes and fresh burrata. They both feature perfectly paired bread which is tinged with slight blackened around the edges and this connects these dishes in a beautiful and new way. The cauliflower is not only amazing but it’s also a ‘sprouting’ variation which with just the right amount of sea salt, it makes one savory each bite. The Gnocchi is one of a kind and dressed with lemon pepper and butter and when enjoying it one can tell this is different and almost how one would curated sea scallops while also simultaneously being a smart and savory foreshadowing of desert. For dessert order both the Cheesecake which is dense in size but complex to taste. Pair this with their 'Cobbler' which unlike the pie style one is used to, this cobbler moment is absolutely a surprise as it's absolutely cornbread in nature and most memorable. We ordered the crudo, focaccia with goat cheese, Tomahawk Rib Eye steak, cabbage, carrots, and topped it all off with Betsy’s cobbler. The crudo was very tangy and fresh and the Focaccia with goat cheese was wonderful. The Tomahawk steak was the star of the meal and cooked to perfection. The cabbage and carrots were flavorful but unfortunately they were quite over salted which really took away from the enjoyment. We gulped quite a bit of water afterwards. The Betsy’s cobbler dessert was very underwhelming as it was more like a yellow cake with berry jam sparsely spread within. It is not the standard fruit loaded faire we generally presume encompasses a cobbler. The restaurant was small and filled to capacity inside and outside but we received very good service. Coming back from being open for just 31 days until the Eaton fire hit the neighborhood, Betsy is a unique experience in that all food is cooked under live fire, and the menu will be somewhat of a surprise because the owner/chef procures everything fresh from farmers and doesn’t use distributors.
