Wow! I really enjoyed this steakhouse. This is a cozy spot located inside the hotel, however it is so much more than just a hotel restaurant. I was really pleased with the hospitality and the service which was excellent. Moreover, the vibes of the restaurant itself were a kind of solid steakhouse/ Midwestern vibe that I really enjoyed.
As for my meal, I began with a vanilla old fashioned, one of several twists on the classic supper club cocktail offered on this menu. This was a sweet and deceptively boozy cocktail that tasted like a sugar cookie without being overly sweet. A very nice start to the meal. I followed this up with my appetizer, their signature cornbread. While there was a slight hiccup with the temperature of the bread, I didn't really care. The cornbread was excellent, and the compound butter that it was served with was also very good.
My main dish is really what I was excited about. A bison fillet served with the signature side, the three sisters--squash, beans, and corn, in a kind of succotash. I've never had bison before but I'm an instant fan after this dish. For context, I'm not usually a filet person; I feel like the cut doesn't have sufficient flavor. The bison changed this. For me, It felt like a hybrid between a New York strip in terms of beefy flavor and a filet in terms of tenderness. It was a very rich, only slightly gamey and very yummy flavor. I really haven't had a steak like it. It was perfectly seasoned and perfectly cooked. Wow! Worth the high price point. The side dish was also very good and was a good way to get some vegetables into the works. I complimented my steak with a local IPA and then finished with a creme brulee. Overall, this was a very, very good dinner with great service and I really enjoyed myself. I highly recommend this for anyone who is traveling for business or pleasure...

Drinks & Appetizer: Off to a Great Start Our drinks—the Vanilla Old Fashioned, Patio Daddio, and Thoughtful Tropical mocktail—were all excellent. Creative, balanced, and enjoyable. The real star of the night, though, was the Crispy Pork Belly appetizer ($17). Served over roasted creamed corn with a maple mustard glaze, it was absolutely phenomenal—crispy, rich, and full of flavor.
Entrées: A Mixed Experience The Duroc Tomahawk Pork Chop ($42) was delicious, well-seasoned, and perfectly cooked—but small for a tomahawk cut. The side of “smashed” fingerling potatoes was underwhelming: not smashed, served cold, and far too large a portion. It felt like filler to pad the price.
The Butter Burger ($18) had a flavorful patty, but the untoasted, overly firm brioche bun dragged it down.
The Country Mac & Cheese ($19) however, was rich, cheesy, and kid-approved.
Service: Needs Improvement Our server, Saya, was disappointing—barely said a word beyond taking our order. We weren’t told about the nightly fish fry special, and only found out after overhearing another server. When asked, he simply said “oh yeah,” as he brought a box to pack up our food.
Overall, Cedar and Sage has great food potential—especially the appetizers and drinks—but the service needs serious attention. We’ll return, but will choose dishes more carefully and request a different server next time.

Read moreOur party of 12, from 3 states, and ages ranging from 4 to 75 had a spectacular dining experience, with Say as our server. This was a ‘rewirement’ celebration, and as sometimes happens, we were a bit late. The restaurant team was so gracious in understanding as we had called with a forewarning of the delay.
The entire experience, from the creative cocktails, small plate shareables, entrees and desserts solidified this place was The Right choice for a once in a lifetime career celebration.
Pacing of dishes was ideal to enjoy both the food and the conversation. While every dish was impeccably prepared, the acorn squash gratin dish garnered ‘oohs and ahhh’, and samples were had by all. Our 6 year old niece was mighty proud her first ever duck wing experience was memorable for her and others who were fortunate to indulge.
Say was so personable, genuinely kind and attentive. And he was genuinely enjoying our enjoyment. He and the Cedar and Stage team capped off a memorable celebration in the very best of ways.
The interweaving of dishes central to the Oneida nation makes this a very special experience.
