My review is of their brick and mortar location at the Linc. We visited for the first time ever after reading all the rave reviews and ordered the Maccheroni with Creamy Sausage and Mushrooms and the Spaghetti with Tomato and Sausages. The red sauce was more of a Bolognese in style and had an overwhelming amount of rosemary, while the pasta was a classic al dente texture. The result was a simple dish that after a few bites was not enjoyable to eat due to the excessive amount of rosemary used so it really overpowered all of the other flavors. The white sauce/mushroom dish was lovely from a flavor profile but the pasta was not just al dente but almost tasted as if it really needed another minute or two of actual cooking. The space is very brightly lit in such a way that it's a little uncomfortable as the lights are very harsh, most likely led or daylight fluorescent bulbs. They do not serve beer or wine but you can bring your own. I would recommend that they change the lighting and separate the areas for guests dining on site from the to go pick up orders as the line does get quite long depending on the time of day. We may try it again, but our first impression did not match the many positive reviews we have seen from others. UPDATE: We have been to Italy multiple times and understand what al dente pasta is and what the authentic flavors of Italy are vs. American/Italian flavors and there was nothing delicate about the red sauce - perhaps it was just an off night for this place, so we will try it again to see if the other reviews hold up. I saw this restaurant on the Stories of Austin small business page and knew I had to try, and it’s safe to say the food did not disappoint one bit. The gnocchi is so soft and the pasta tastes homemade. It’s also customizable to an extent that other homemade pasta food trucks aren’t. So why not 5 stars? There was one woman working in the truck and I’m sure it’s not an easy job, that being said I asked her for some advice ordering and she was so rude. She barely gave me any reaction and tried her best to not answer my questions. And the menu is not that easy to understand for new customers. She treated me and my friend like we were the least important people in the world despite her having 0 other customers. I asked her for recommendations to make sure I get the best pasta experience possible and she basically just told me everything’s good enough. I struggled to order something exciting (definitely wish I tried some of their lasagna :/) and left feeling disappointed that a beautiful small business with such high quality food decides to treat its customers this way. Read moreWe were so excited when we placed our take-out order for Dinner. We've been looking forward to trying their pasta and making it a regular stop for us. Tonight, I placed a takeout order at 7:20 PM over the phone. I ordered Caccio e Pepe and a Tagliatelle meat sauce dish. I qas quoted 20 minutes over the phone and my partner arrived for pickup at 7:35. He paid then was quoted 5 more minutes. My partner waited on the picnic bench outside the truck for 35 minutes before he was able to pickup our order. I called and spoke with the manager to explain our situation and asked for some kind of compensation. The manager told me that their policy is "if you don't like the food you can bring it back". We felt bad returning the food as we were both hungry, and excited to try something new. We've both spent several years in the industry managing restaurants and know that this could have been an easy fix with either a voucher for next time or a refund.
