So this is the third restaurant in this spot during my time in Bailey. I went in with low expectations and was pleasantly surprised.
Keep in mind they’ve been open less than a week.
The food was better than I expected for generic Tex Mex style food. The salsas, brought with house made chips before I even ordered, were house made. A nice charred tomato salsa and a very good tomatillo lime salsa. The white sauce burrito with the ground beef was good. I ordered this togo and they threw in a full bag of chips and a side of the charred tomato salsa. I hope their business model can support this because for $20 what I received was very generous.
The service was quick and friendly. There’s a real sense of authenticity with all FOH member communicating in Spanish, which I speak so no issues there. The biggest impact on me was watching them unfortunately lose two shelves of mid range to pretty expensive tequila due to the shelves not being appropriate for the location on the wall. It all came crashing down(I was so sad)and they didn’t miss a beat. They cleaned it up and even gave us complimentary shots at the bar. I’ve never seen this in my life and I’ve been in the hospitality industry for 30 years.
Another feather in their cap is that they were open on a Monday which is uncommon for the mountains. That will probably change as they realize business levels.
Overall I went in expecting to be disappointed, yet I left knowing I will return as long as they are here in our little town....

Went here with typical low expectations. (umm Bailey right?) We can’t get a single decent anything along the whole 285 corridor -except “2 Dads” (also great!!) which WAS the only place in 30 miles either way worth eating at. Well HOORAY!! We now have 2 places !!! That are GREAT!!!!!
This place is very new and I guess everyone is checking it out -it was beyond busy, but that did not matter. Super friendly, smiles everywhere, Food was coming out beautifully, service was great..
Usually Mexican (and for sure ALL of the 3 other 285 local corridor places) is just the same 5 brown ingredients swizzled around and called something different -all flavorless / over cooked / soggy / boring / runny crap on a plate …. NOT HERE!! I was expecting it to be the same BUT it was not!!
Food tasted fresh, looked great, great variety, more authentic tasting And the prices were fine (things necessarily just cost a tad more up here ) I Was sad to see the old “rustic station” at this site go away, as it was acceptable… the “smiling Pig “ that replaced it was downright horrible and a total embarrassment to our local community - I ate there twice just to give it a fair chance and knew it’s days were limited …. Before we even hit Bailey, we’d already decided: Mexican food or bust. My husband is a die-hard fan of all things fajitas and tequila, so we had Casa Sanchez locked in like a flavor mission.
It’s a nice, good-sized restaurant with both indoor and outdoor seating. Now, I love summer—but I also love my sanity, so I opted for the sweet, sweet hug of air conditioning while we ate. Inside seating for the win. ☀️❌
We were greeted and seated right away, and the young man who took care of us was on it—friendly, fast, and no nonsense. Our drinks and food came out quickly, and let me tell you, everything was delicious. From start to finish, it hit all the right notes. And then… the cherry on top: FREE SHOTS at the end of the meal. I mean—YES PLEASE. Bless this restaurant.
Now let’s get real for a sec: When you leave the big city, finding good Mexican food can feel like a gamble. I’ve had some past experiences where—no offense—but it was basically a group of confused white folks in the kitchen making flavorless regret. 😬 Not here though. Casa Sanchez knows what they’re doing, and the food reflects that.
