I visited The Wine Collective for a small group wine tasting. There were about three parties or groups in the wine tasting. The wine tasting and tour is part of being a wine club member. It lasts about 45 minutes. The owner explained about the grapes and the thought process of what he was trying to make. In addition, he talked about the science behind why things happen a certain way and behind wine making in general. He is extremely knowledgeable and went as far as explaining how the weather affects certain grapes. We were even able to sample some of the unfinished wines just to get an idea and comparision. We tasted 5 or 6 wines during the tasting then stayed to order food and more wine. After the tasting, we got tapas for dinner. I loved the bread that they had. It was charred and had a smoky flavor, with butter and salt on it. We also got the eggplant and the smoked fish dip. The dishes were all incredibly delicious and went well with the wine we ordered. The setting is similar to a brewery where you see all the vats. It is a big and open space. There was a good amount of seating and parking available. We sat at the bar for our food and drinks and the service was awesome. The wines were different from ones I have had before as they came from different grapes. The space itself is cool; an industrial warehouse turned winery barrel room adorned with a large bar and spaced out tables, heat lamps, and neon lights. We had a first-timer playing live music - after some initial volume issues, it ended up being a nice addition to the ambience.
The service format requires you to order from the bar which didnt really fit the vibe (or the price we ended up paying) but wasnât the end of the world. That being said, there was little to no insight on the wines and vermouth or the menu beyond âeverythingâs goodâ.
To be fair, it was very good. The food was great and the vermouth cocktails were very good. I am surprised by the âeverything made fresh and in-house commentsâ as the entire menu either comes out of a fridge or a tin as they do not have a commercial kitchen. While this may sound like a dig, itâs not - the selection of cheeses, meats and fish for the charcuterie were great, and the menu otherwise very creative considering these limitations. Also, Iâm pretty sure the bread was toasted on a Bunsen burner? Kinda cool.
My verdict is that you shouldnât plan on a full meal here. We did as a family of 4 and ended up dropping a cool $300. Itâs more of a sexy cocktail and finger food place before a show kind of deal.
