Blueberry Streusel Muffin: Nikola’s Bakery is a manufacturing, baking, and food development company comprised of entrepreneurs, bakers, chefs, and business professionals. They were founded in 1996 and are located in Bloomington, MN. The company specializes in baking traditional and unique bakery products such as muffins, mini muffins, stuffed muffins, coffee cakes, sweet breads, pound cakes, brownies, and snack cakes. More traditional than unique, their blueberry streusel muffin is large, filled with an ample number of blueberries, and coated with a crumbly streusel. For those of you that are fans of prepackaged grocery store muffins, I don’t think you will have too much to complain about. That said, here’s my overly analytical assessment as to why I thought it was just okay 😐 . When it comes to blueberry muffins, I prefer to have crunchy sugar crystals as opposed to a soft streusel. Additionally, this muffin also contains lemon juice as an ingredient. Even though it’s just a hint of lemon in the flavor, I don’t care for it. Speaking of ingredients, the length of the ingredients list (see final picture) and number of artificial ones is enough to give our nutty Health and Human Services Secretary a heart attack. That brings me to my final point, which is that it’s just too calorie dense. For 430 calories there are a lot of other tastier desserts I would rather spend my discretionary calories on. 2.5, will round up to 3...

I reached out to Nikola's Bakery because they made the best biscotti I had ever had, which we sold at a cafe where I worked in NY in the early 2000s...I had been dreaming about and craving them ever since! Bill @ Nikola's Bakery returned my email letting me know that unfortunately they no longer make those biscotti, but said that they now have a new product, Oatstart Cookies, which he thought I should try. I went ahead and ordered a variety pack, and Bill graciously threw in some extras! The cookies are delicious! They are good for a quick treat, a little energy bite, or even an on-the-go breakfast & are a great "healthier" option to the average cookie that I can feel good about giving to my 4yr old, who loved them as well...kid and...

The other night, I bought a package of 4 Salted Caramel Coffee Cakes from Nikola's Bakery, sold at the Circle K store. Since then I've been searching all of the surrounding Circle K Stores for these coffee cakes. They are literally the best coffee cakes I've ever had! The only problem is that they sell out fast.
