Guadalupe Mountain Brewing Co — Restaurant in Carlsbad

So today was my girlfriends and I first visit to Gudaluoe Mountain Brewing Co. The location is great just off the main Highway South of Carlsbad. Outside of the building is well maintained and clean. The setup is kinda strange it looks like a wait for the waitress or hostess to sit you but this is actually go up to the counter and order pay first type of establishment. The inside was nice and clean however its overpacked and the tables are to close together. The Menu had food items such as Pizza, Paninis and Salads. Prices on most items were fair with the Pizzas being the highest dollar amounts on the menu. So the cashier that took our order (Tiffany) customer service skills were okay but we felt rushed while ordering our meals for lunch. Found out sodas, teas, and water was all canned and bottled drinks.. personally not a fan of this. We decided to have our meals outside on the patio tables which was nice and quiet vs being inside. Food wait time was little to none. My girlfriend had a salad which was huge and could feed two people. She was fond of the fresh mozzarella. I had a panini (chef special) which had chicken, bacon, green chili and mozzarella. I was not fond of my panini however the sandwich itself was presented nice but thats all I can say that was good about it. It lacked flavor, chicken tasted boiled which is a huge turn off for me and you would expect more for the price. The bacon is a very small amount which dont add much to the panini. My girlfriend had a lot of leftover salad so she asked for a to go box from a employee up front (Jessica) customer service skills were really lacking due to body language and facial expressions that made my girlfriend feel like it was a hassle for her to get a to-go box. We’ve been loyal customers of this establishment for the past six years, but unfortunately, our recent experiences have been disappointing. During this past visit, we received a pizza that was missing several ingredients, and the overall quality did not meet the standards we had come to love and expect. I brought this to the manager’s attention in a polite and respectful manner, also noting that the pizzas have seemed noticeably smaller in recent years. Rather than addressing the concern constructively, the manager insisted multiple times that there had been no change in portion size, despite clear photographic comparisons suggesting otherwise. It was also suggested that the pizza only appeared smaller because it was placed in a larger box, a claim inconsistent with both our own photos and those shared by other customers on Google. While I don’t believe in the notion that the customer is always right, I do believe in acknowledging clear, factual feedback. Unfortunately, the conversation felt dismissive and unnecessarily combative, which only added to our frustration. To their credit, the staff did remake the pizza and provided an additional one at no charge. However, after a pattern of declining quality and an unwillingness to take ownership of customer concerns, we’ve made the decision to stop dining here. We truly hope management takes this feedback seriously and considers returning to the level of quality and service that once made this place a favorite in our household. With the lack of non fast food restaurants in a city this size, I was excited to see how this local brewery fared. To start off, the building and atmosphere were great. Beer and pizza were left with a good amount to be desired though. While the beers were clean/clear and had good aroma, the flavor fell flat. Part of this makes sense when the IPA stuck to mostly one hop; hence the name Mostly Mosaic. I also tried the Cave Common and had the same impression; clean but low flavor. As for the pizza the flavor was good, but due to how busy they were; only half was cooked all the way. The other half on both pizzas was just past the boarder of dough in the center. I would attribute this to both how busy they were and the heat on the oven (well cooked outside/low center cooked). The edges of the crest were cooked well with the right amount of char. When you have to crank out the amount of pizzas they had to at the speed, it makes sense. I would have preferred to wait an extra 5 min to get a fully cooked pizza though. Overall not the worst, but just...
