What I tried: Beef Taco (seasoned ground beef topped with melted cheese and lettuce in a soft corn tortilla) Birria Taco (seasoned, juicy birria beef topped with chopped onions and cilantro in a soft corn tortilla) Queso Taco (melted cheese in a soft corn tortilla topped with your choice of meet - I tried it with carne asada (steak))
Recently, and unexpectedly, I have had these cravings for tacos (and tamales - which is going to be my next food search). So, true to nature, I researched several places, read reviews, and settled on Zapata - which luckily was listed on GH.
My first order from this taco shop consisted of two beef tacos and one birria taco, because I had no idea what to expect, but wanted the opportunity to sample a variety. Both tacos were great with the juiciness of the birria taco becoming an instant favorite.
Three weeks later, this has now become my favorite weekend splurge. This weekend, I ordered beef, birria, and queso w/ carne asada (because I didn't want beans, which usually comes with the carne asada taco). They were all delicious. Unfortunately, I still got beans with the queso taco with carne asade but, fortunately, it was still delicious (!) so it didn't matter!
I'm happy I've found this taco spot and look forward to being a returning customer...

First time at this place and also first time at a restaurant with this type of set up. Before you are seated you order your food at the register. You are given cups to get your own drink. Then you pay for your order right there. This includes the standard line for tip. Why I ask you do i have to tip if there are no waitstaff to take my order, bring my drink or even utensils to my table? I had to do all that on my own. At best there is a busser person to bring the food to the table.
They are also very quick to want to turn the table. I was asked almost immediately upon finishing my meal if I was done so they could clear the table. I was actually not done as my daughter wanted one more taco which I had to get up to the counter and order on my own.
I hope the staff is not dependent on tips because this is not a full service restaurant Where waitstaff actually work to deserve their tips.

Lo and behold we found āZapata Mexican Taco Shop,ā authentic street style tacos made fresh and the right way. Colorado Springs has been lied to by a lot of Mexican restaurantsā¦. Sure you can go to other places for the beer or just to hang out, but if you want real good Mexican food Zapata is the place to experience real Mexican Tacos. In California you find good spots all over, but Colorado Springs, the places Iāve gone to itās a different style of cooking. The Mexican dishes I would say slightly American little bit of Tex-Mex or maybe even a Colorado style Mexican dishes. I got to meet possibly the manager Mr. Adrian, cool dude. He said the style of cooking is from Jalisco Mexico, I told him when they brought my plate, I could visually taste the food before even touching it. My first bite of the taco I knew I found the spot. We tried about five different tacos and every taco was on point! Thanks guys...
