Texas Cafe Diner Commerce — Restaurant in Commerce

My wife and I decided to try out the Steak since they have a large "Steak" flag waving out front. We both ordered the $28 Ribeyes and everything was going great. The place was nice, the music was early 90s/00s songs, the waitress was great 👍 Then we got our food. The waitress seemed immediately concerned and as she sat our plates down asked if everything looked okay. I said everything was fine and hoped that the Steaks tasted better than they looked (Check Included Picture). Unfortunately, the only word that comes to mind when attempting to describe these Steaks is... Gelatinous. The amount of soggy fat that accompanied the equally soggy meat was alarming. Who'd a thought an unassuming cafe on a side street in Commerce would ROCK. MY. BREAKFAST. WORLD! In tween mtgs, thought I'd stumble on this gem? 40 min to kill, I'll get some coffee, freshen up and move along. But the menu had different ideas. Decided to give this place a try Sunday morning about about 11:30am, place had handful of people eating inside. The inside is very nice I’d give 5 stars for appearance and cleanliness. Upon walking in a heading to cashier she never acknowledged me just stared around the restaurant till I said I was there for a togo order, looked young so probably the reason for the poor customer service. I ordered the sausage gravy and biscuits, the biscuits were awesome but they hardly put any sausage in the gravy and needed seasoning, I literally counted 4 small pieces of sausage which was a disappointment I mean even McDonald’s has more sausage to gravy ratio .
