I grew up in New Haven, Connecticut, where wood and coal fired pizza is a staple. When I found out Wood Fired Pizza Co. existed near me I was excited to try it.
So I visited the other day for the first time. Waited about an hour for the pizzas, totally understandable, it's a small oven and you can only do so much at a time. Once I received them though I was a little disappointed. The pizzas were hot out of the oven, but when I returned home to eat them, there was barely any bacon on the pizza I had ordered. (see photo) The pizza itself was hot and perfectly cooked, but there just didn't seem to be much going on flavor-wise. The sauce was tasty, but the dough itself (although crispy) had very little to offer in the flavor department, despite being cooked in their beautiful wood fire oven. The most disappointing thing to me though was the cheese, it seemed to be simple dried mozzarella, which caused both of the two pizzas I had ordered to be greasy and not very flavorful. I, personally, would pay even more of a premium for these pizzas is they simply used fresher ingredients that offer more in the flavor department.
I'm being especially harsh here because wood fire pizza is near and dear to my heart. Besides all that, the staff was very accommodating and friendly during my order and pickup, and they called me with enough time in advance (letting me know they were ready soon) for the last pizza to be coming out of the oven as soon as I walked in the door. This location is primarily a takeout establishment. There is not any tables to sit down and eat at, except for the bar stools... which, I imagine, most people use if they need to wait for pizza to be ready.
I have been here only one time, and I am so glad that i did NOT call my order in via phone. I was able to sit there and bask in the extremely ridiculous aroma of the pizzas that were flying out of the oven! And, oh the oven! While it is not 100 years old, and rich with history, it is very well built and very very effective. Tom ( I guess it was him ) was in charge and did an expert job maneuvering each pie into position and constantly rotating and sliding each around inside to ensure perfection!
There were about 5 other staff helping crank out delicious pizza and this was on a weekday at about 6pm. I can not wait to go back and get more pizza again, and i will be sure to walk-in and order so i can wait and be happy!
Oh yeah, and the website is pretty darn accurate and very helpful with making decisions about what to get.
For those interested, my 1st Wood Fired Pizza was a small half ham half chicken. And it was freakin awesome.
And for anyone still reading all the way to the end.... I have been to NYC and had Lombardi's and John's on Bleeker St... and also been to Italy twice... and this was darn good pizza!! No doubt!

   Read moreIt's a shame that I had to move away from the Cypress area after living there for years; Wood Fired Pizza was my go-to pizzaria every Friday or Saturday night. Tom and his family are wonderful people who use only the finest ingredients. You can tell that they take true pride in what they are serving. Every ingredient and aspect of their cooking process has clearly been examined and refined. Not once did I ever have anything less than a delicious pizza and I really looked forward to it every week. Typically I don't prefer supreme pizzas, but the Wood Fired Fully Loaded is somehow greater than the sum of all its parts and better than the typical one or two topping pizzas I would otherwise normally order. The Bianco pizza is also a personal favorite and a small one is a great substitute for something like cheesy bread since they don't really do typical pizzaria appetizers. The salads were always fresh and the gooey butter dessert they make is also worth trying. This place was a saving grace for me for years after moving from New Jersey and missing good pizza.
