as a person who travels to Texas, i have come to love BBQ, and am always on the search for a good local shop. behold i have found it here at mavericks. a small local shop to defiance Ohio, where seating is very limited hides this little gem. it is Quite, Quaint, and out of the way, you will not find it on the main path. but, it is worth your while. i have been here 4 times now and it has yet to disappoint. the meats are carefully tendered to and in my mind resemble in texture and quality of those that has made BBQ a revered craft to those that appreciate it. I will not ramble on about the brisket or the ribs. they are quality and delicious. the texture and bite are in my mind where they should be.
But hiding in the menu are some gems, the Street Corn is great. and the brisket grilled cheese is a amazing sandwich that deserves its own spot and its absolutely worth trying on whatever day you choose.
My biggest complaint is that the beans have been overlooked, and feel discarded and thrown to the side, a simple oversight for a new shop for sure, but they do feel neglected and cast off, and with a little love, they could really shine.
Now for the secret weapon of this place....... the wings, the hidden gem of this place. I will argue that the wings here are the best in town, Nay in the area. Simple, Meaty, And delicious. i warn you, they do not have a lot of sauce options, and lack the blue cheese as a condiment. BUT, these wings are perfectly cooked, Juicy and ample sized. perfect tenderness with just the right amount of smoke. these wings have the perfect amount of bite and have more than enough tenderness to fall off the one.
In conclusion, if you ever find your self out and about in Defiance Ohio, and find yourself inquiring for some good food, find yourself to this place. yes it will be more than your McDonald's cheeseburger, but i promise you its worth the price, and food is filling and you can tell it has been cooked with care and a deep desire to put something more on our plate than what your use too.

Read moreI've been begging my husband to try this place for months and finally got to try it today. I think the timing was perfect because the online ordering is set up and going full swing. Ordered for pickup ASAP and the food was hot and ready when I arrived. We ordered a El Cue-bano with mashed taters and elotes and a Brisket grilled cheese with seasoned fries and baked beans. There was one mistake - Ended up with a serving of mac and cheese by mistake but it was really good so I can't really complain. If this happened to one of my gluten intolerant children then we'd have a problem. As for the flavors and textures of the sandwiches they were very good. Smokey, meaty, fatty goodness on crispy Texas Toast. The condiments were neither too much or too little. The only thing I would ask is that they make sure the sandwiches are cut all the way through. My husband and I were sharing our sandwiches and the cue-bano was difficult to split even though it had been "cut" before we got it. I don't think we will ever get the baked beans again. They taste like canned Van De Kamps so really nothing special or uniquely barbecue-y about them. My husband suggested something along the lines of frijoles charros with bits of bacon or bits of burnt ends in them instead of a sweet bean which sounds really good to me (guess I'm partial since that's what I make at home). Years ago I was in Kansas City and I heard about a place called Joe’s Kansas City BBQ. It’s world renowned and you have to eat there is what I was told. I drove past it twice without realizing it was inside of a gas station. People lined up out the door and across the parking lot. They had four tables inside and they were half of the inside of a gas station.
I never knew it until tonight but the one thing we were missing was a small bbq restaurant! I had the one lb of brisket, slaw and beans. Their brisket was great! The sauce was authentic and had a great flavor (it was different than your traditional ketchup based bbq sauce....unique and delicious!) Their coleslaw seemed original as well. Definitely not some Gordon Food Service dumped in a pan stuff. Needless to say, I was impressed and will be stopping once a week on my way home to pick up dinner!
I travel a lot!!!! Everywhere I go I try the local barbecue! The prices were very comparable and the portions as well. Definitely impressed...
