I recently discovered Bamboo Sushi, a new restaurant in Congress Park, and I'm so glad I did! While I was aware of a few other locations throughout Denver, this one caught my attention.
I was at a tea shop in Littleton catching up with a friend when we spontaneously decided to drive 30 minutes for lunch here. It turned out to be a celebration for his birthday lunch/early dinner, and it could not have been a better choice!
The service was wonderful, and the food was absolutely delicious. If you're looking for a great sushi experience without opting for omakase, this place is definitely one of my top picks! The menu is straightforward, making it easy to choose, and our server was incredibly helpful and engaging, which added to the overall experience.
The decor is very nice, creating a pleasant atmosphere to enjoy a meal. Plus, street parking is available, which is always a bonus in Denver.

Read moreVisited the new Bamboo Sushi spot over in our neighborhood here in Congress Park and was a bit sad. I miss the old old Ronin with the two brothers behind the counter. The nigiri was sort of gelatinous, the rolls were doused in thick sauces.
I'll own that I'm a full on sushi snob foodie and that this spot is likely perfect for those with kids or low expectations in the quality realm. I will say we ordered 3 kinds of nigiri and they randomly brought us 4 pieces of two of the kinds and 2 pieces of another variety which was more than we were expecting-two of each is what we anticipated as the server did not clarify or ask. We ate 3 of the 10 pieces of nigiri served and half of the 2 rolls...left the rest in disappointment. Read moreI was so excited they opened this location close to my place because I’m obsessed with the LoHi location. I’ve been to this new spot twice now, both times were pretty rough. The tempura cauliflower, a staple appetizer item, they left raw batter on twice - trying to correct their mistake. Unable to get that simple dish correct, I came back with hope. We ordered the spicy scallop rolls as hand rolls as advertised on the menu. There were 2 of us. They brought one, and when I asked for another they then charged us for multiple rolls instead of the one dish. The Full Circle rolls were made differently as well, leaving off the fried green onion.
