Grind Coffee Co. — Restaurant in Edinburg

Working in downtown NYC, there's no shortage of good coffee daily for me. So when I make my annual Xmas trip to Edinburgh to visit my girlfriend's family, I was pleasantly surprised to run into this somewhat hidden spot. After my first visit here, I can say I'm finally deleting the Starbucks app as I've found my go-to in Grind. Go in and you're greeted with all the hallmarks of a good cafe: a friendly staff, cool looking coffee equipment, good seating options, and most importantly excellent coffee.

I've been visiting other shops in the area for a couple years now and they really don't compare, especially the commercial offerings. Grind is here as the real coffee option in Edinburgh. Nitro brew, espresso, chemex pourovers, etc. This should be everyone's new spot.

Now if this place had a liquor license, it would be really cool to hang here...

On Saturday 10/19 at about 2pm we popped in after a visit to Edinberg to get coffee before we hit the road back to Houston. This is an eclectic coffee shop, which seems about halfway finished and like they might be working or decorating currently? The person behind the counter was nice, but in NO hurry (we had 2 people in front of us and with our two coffees which were THE SAME, it took about 20-25 minutes to get our drink) NOW that being said. The coffee was extremely delicious. They take great care in the quality of their ingredients and the perfect measurements to ensure a balanced blend of flavors. This MIGHT be why it took so long. If you're not in a time crunch (and maybe we are just used to Houston's "get them in and get them out" restaurant mentality) this seems like it'd be a great place to sit and study or have AMAZING coffee...

Everything about this gem of a place is wonderful. Even though I am at only my 2nd visit, I am positive that this is one of Edinburg's best. This place is" Small business but BIG Energy". The baristas are charming and very skilled at their craft. I am sad that it took me forever to become a customer. I wish I had known earlier of this magical place. But I am certain that I will be a customer for life. Today, I left with two of the most delicious drinks and with some art. I am one happy gal! 2 days in a row, I have had the Applewood Smoked Latte..ummm YUM!!! Thanks to Erica Briones for making my morning the best morning I have had in a long time.
