It's been awhile since I've gotten food from Texlahoma on waterloo rd because last time I picked up a rack of ribs they were like beef jerky... I'm not kidding. Dry and so tough i couldn't chew them. It really surprised me because I've had awesome ribs from them before. I immediately called to let them know and was told a manager would be in contact me.....I never heard from anyone. That was probably 8 months ago and I drive by their place 2-3x weekly. Tonight I decided to try them again and get the brisket potato.... which I had also enjoyed in the past. The young girl behind the counter "warned' me the potatoes were cooked this morning.... stating some people don't like fresh cooked potatoes. I thought that was odd but she ensured me they were fully cooked so I felt comfortable placing my order. She didn't ask me anything about possible toppings, which I was always asked about before, so I asked if the brisket potato would come with all the toppings including the cheese sauce. She said yes. When I got home and opened the box there a little container of sour cream and butter. No barbecue sauce (and this is a barbecue place!) or cheese sauce and the brisket is dry and cold. I won't ever get togo food from there again. IF I eat at this particular restaurant I'll eat there so if there's an issue it can be addressed in the moment. I gave 2 stars because I've had great ribs and potatoes from here in the past. I've noticed staff change to a younger crew... has that made a difference? Because the quality of food has changed I wouldn't feel comfortable recommending...

Solid BBQ. This place is small, but good things come in small packages. They do take out or dine in. Here's a run down of what we got and how it was! Brisket - excellent, the fat was perfect, melt in your mouth a little salty a little garlicky goodness, the meat had a great texture (fall apart), and a nice smoke ring. Jalapeno cheddar sausage - cheesy, a little spicy, nice bite, overall delish. Pulled pork sandwich - excellent, juicy (read similar fat to brisket, melt in your mouth), tender, good smoked flavor and the bun was toasted on both sides which the eater said was "awesome"! Fried okra - BOMB, the perfect breading not too heavy not too light, super crispy and overall amazing! Potato salad - standard, nothing to write home about but a good choice if you're a potato salad person. Baked beans - pretty good, a little more spice to them than a normal baked bean (I think of a more sweet sauce), but overall pretty good. Cole slaw - standard, not great, not bad, just eh. Spicy BBQ sauce - pretty good, nice little kick, very thin though so I found myself wanting it to be thicker so it really coated whatever I out it on instead of running right off. Regular BBQ sauce - yummy, very well balanced and delish, also felt it was too thin though and wished it was thicker. Overall, a solid BBQ...

Best BBQ in Oklahoma by far.

Update 12/21/2024: my family has loved texlahoma for years, we get it at least once every 2 months or so when we make it to Edmond. But as of today my rating plumets from 5* to 1*. Stopped in and grabbed 1/2 pound each of the pulled pork, chopped brisket, turkey, and bacon burnt ends. My entire family was completely disappointed with everything. Dry dry dry and absolutely ZERO smoke flavor on the meat. Brisket taste like an overcooked pot roast and the bacon burnt ends are just pork belly burnt ends. Should not call it bacon if it's not cured before being smoked. I was still optimistic that the sauce could save it but man was I wrong. What in the world has happened to the sauce? It use to be extremely thin with a hint of vinegar, now it's 5x thicker and taste like vinegar with peppercorns. $45 wasted. It's a sad sad day that texlahoma will no longer be on our favorites list.

1/20/2025 update:

After being contacted by the manager after our last rough visit, we happened to be going through Edmond today and swung by the Waterloo location. I'm glad to say our last visit was just a one off as today's meats were way better. Still a little less smoke flavor than what we usually get but its raising my rating back up to 4/5 *. It's alright, they're kind of expensive. I got a jalapeno cheddar sausage sandwich they should've cut the sausages in half so they lay flat because every time i took a bite i would have to put the sausage back in. The seating is nice, they have tables with not so comfortable chairs and they have booths that are moveable and not bolted down, as a bigger person that's a great piece of knowledge to know. I didn't like that you have to walk to the back to get ketchup and BBQ sauce. They don't have a cup of water, you have to buy a bottle of water for 50¢. I was surprised at the price because the online pictures portrayed a different price, the current menu is about 5$-7$ more. They didn't have a hand held menu so i took the best picture i could with the glare. *Edit* I'm not sure why Google isnt letting me upload the menu in the proper size, I've taken a picture of the entire thing but it didn't seem to show it all.

There was no smoke smell. That was flag one for me, I place an order for moist brisket, pork belly, jalapeno cheddar sausage, Mac in cheese, and green beans. Ok let's just jump in. Let's start with the sausage 🤔. This seemed store bought and lacked that homemade smoke sausage flavor. The pork belly was dry but the flavor wasn't terrible. Again no smoke flavor... the brisket seemed like it had been sitting in grease for hours. No smoke flavor... the sides seemed store bought.. potatoe salad was like whipped mashed potatoes. This was not Texas bbq at all...
