Tacos El Diablo — Restaurant in Fort Collins

Being a resident of Austin, Texas, my standards for quesobirria tacos are stringent. Tacos El Diablo introduces a unique spin on a renowned dish.

The red meat was cooked perfectly and included the ideal blend of familiar spices. The shells could have had a bit more crunch to them to sustain their structure prior to dipping them into any consumme. I appreciated the addition of the salsa verde and a very spicy red sauce; this gave a nice trifecta of options aside from the traditional consumme. The consumme had a fresh, original, and slightly sweet flavor which was extremely on-point.

I highly recommend this place as a comparable option for Texas, where birria has been taking the food truck scene there by storm. Great stuff Tacos El Diablo; I will be back when I return to...

Food is very good. I’ve had it once. But - Bummer review coming: 3 stars for crummy service attitude. I just visited the truck, and was told to “hurry up we got like 15 minutes” i smiled and I said “ how bout I come back another time? Clearly I was deciding what I wanted to order. The gentleman at the window seemed to agree with me that coming back another time was better. So I dismissed myself politely. But now, It’ll be hard to come back nor recommend this place based upon the service I didn’t even get offered. Was such good food the first time. I met the owner the first time too, he’s a great guy. Love the food we got! Though we have a few good Mexican/tacos in the area- this is the best in Fort Collins hands down. I often find myself missing the great tastes of the food trucks in Texas, and have always been under-whelmed - Tacos El Diablo brings it back! Full disclosure- I've only tried the 1lb Birria Tacos so far, but they're authentic and amazing! Every part of the meal is top quality. Tortillas, beans, salsa, consomme, onion mix, hot oil (never had before), meat- all amazing, all quality, all authentic and delicious.
