Fantastic. I've been wanting to try Calisience out since they were just a food truck, but the timing has never worked out for me. Today, I finally got to try, and it was great.
They have a limited menu, but that just makes it easier to pick what you want and also makes it a great spot for lunch. The interior is clean and simple, and super open. No loud music or dusty decorations hanging around.
We had the birria ramen, which I admit is more an Instagram fad that I've been drawn in by, and the tacos Dorados, with two kinds of horchata and a side of rice and beans. First off, the rice is simple and fluffy with a bit of a smoky flavor. The beans are refried and definitely have lard as well as a bit of spice, maybe from the birria consomme? Not sure, but they were very flavorful, if a bit runny (which is how I like my refried beans). The horchata were both great (classic and strawberry) . They came in tiny glasses, but refills were free if you asked.
As for the mains, their tacos dorados were easily the best I've ever had in a restaurant. The birria had great flavor, the tortillas were doubled up and super crisp and jam packed with melty cheese and tender meat. The consomme was a little spicy and tangy, and balanced well with the salsa Verde that came with the dish. The ramen was a bit lackluster, but this is coming from someone who is a bit of a ramen enthusiast. The noodles were obviously cheap instant pack ramen, and not even cooked fully, as they were still a little spongy, and the consomme was barely hot. The bowl they come in is way too shallow for soup and they serve you with chopsticks and a spoon for something that is in a dish maybe an inch deep. The broth itself was great, the birria fantastic, so while the noods...honestly sucked, I was so impressed with the rest that I will be back. Just skip the ramen and try the other, less trend inspired menu items.

The first time I got birria tacos (tacos Dorados on their menu - 3 tacos with consome for $15) and they were good, but good in the way that most salty, fatty, crunchy food is. Like, the flavor was nothing special. The consome was very watery.
Today I ordered the birria plate (birria, rice, beans, tortillas) and again it was just okay. The birria had a good flavor--the spices were rich and earthy, but it didn't have any heat. Also, the meat was dry and a little tough in places. The sides were very disappointing. Both the rice and beans were bland. The menu says the beans are flavored with meat, but I definitely could not taste it. The woman who took my order was nice and the food was served quickly.
To be honest, I think they lost whatever it was that made them so successful as a food truck because if they were serving this level of food previously, I can't imagine being popular enough to want to open a...

We were the first customers of the day.
We were taken to the bar to place the order. We were being asked to pay "up front" with a "pay tip" now. The tip comes up after you have your dining experience, not before.
The food was brought to our table. No water was ever offered to us from the entry to exit. To top it off, the waitress was suppose to bring us an extra plate. She never brought the plate, or ever returned to our table. There might have been 5 customers in the restaurant by that time. Not busy at all.
To top it off, no one came to check on us to ask if we needed containers to go.
The Birria Meat on the Ramen Noodles Bowl was Dry (Old or Overcooked.) The Birria Tacos were just Bland.
On our way out, we looked towards the bar. No one from the staff took the time to thank us. The customers' are what keeps your lights on and your paychecks coming.
