So disappointed in this place. In search of a true craft coffee shop in Gainesville, I come across these great reviews of CYM and it convinced me this was the place I wanted to go. Late friday afternoon (9/5/14) I walk in and it's obviously a hopping place. Lots of people, line at the counter... all good signs. I see single origin coffees on the shelf for sale, good equipment and grinders.. I knew I was in the right place.
The first sign that something was wrong was when I was watching the male barista prepare the drinks of the customers ahead of me. I understand it was busy, but he was rushing everything. There was no attention to detail. I was shocked to see that he did not rinse his portafilter between shots. Not once did this happen while I was there, including preparing my beverage. There didn't seem to be much care to how much grind was in the portafilter and the tamp was very quick... almost an afterthought.
My turn in line and the male barista waits on me. I ask what beans they are serving with Espresso. The response was "Either 515 or medium roast... not sure which one he put in there". In an effort to salvage the question, I asked about origins and he had no idea. At this point I was already ready to walk but to humor myself I asked for an espresso shot so I could drink it and be on my way. What happened next truly shocked and disappointed me. I was served my espresso in a 12 ounce paper cup. I know I may be sounding like a coffee snob here... I'm really not. I don't know a whole lot about coffee, but I know that espresso is not served in a paper cup. When I questioned the barista about this, he quickly responded that because it was an event night they can't have glass dishes all over the property. Really? It's a 2oz espresso, not an iced chai or mocha latte.
Very disappointed, I take my "to-go" espresso and leave. The really sad, sad irony to all of this experience was that my paper-cup espresso was actually pretty GOOD! Well, at least more than decent. With all the lack of care from the barista, it was still a drinkable shot and somewhat balanced. I could tell that whatever they were serving was quality bean. I could only imagine how much better this could have been had there been care and skill placed into preparing and serving it the way a quality bean deserves.
Everyone was nice, but this rush of this place made Starbucks look slow. I see so much potential for this to be a place that serves great coffee, but the baristas need to be more educated about what they are serving and more training and care for quality is needed. Wait in a line then walk around the right to the front of the counter to place your order. Then step out of the front area but not in the order line. It needed a traffic cop. Several people who walked in behind us were asked to move away from the counter.That was the first turnoff. I ordered a Caramel decaf Americano with cream. My husband ordered a Cappuccino and was asked if whole milk was okay. He said yes. We waited a good 10 minutes for our coffee. There was no one in front of us when we ordered. The baristas we chatting away. We couldn’t see what they were doing….because we were asked to wait away from the order area and order line. I got my coffee first. Filled to the rim, piping hot. Tasted good. What I expected. My husband got his a few minutes later. The cup was so light. Nothing but air. I get it. Cappuccinos are frothy. But really? Disappointed with the volume? Yes. Read moreI've been to Cymplify Coffee hundreds of times, and it's hands-down my favorite coffee shop in town. One of the coolest things about this place is the little board they have that shows all the special concoctions their baristas come up with. I've tried a bunch, and they're all pretty amazing, but I always find myself coming back to the maple nut latte and the blackberry lavender—both are just unbeatable.
They also offer some tasty baked goods, though you've got to get there early because they do run out. The ham and cheese croissants are my go-to, and they're always a hit. My kids are big fans of the wildberry smoothie, and I have to agree, it’s fantastic.
