I’m a foodie. That means that I am into food on a different level than your average Joe. For me, it’s a Spiritual Experience to prepare food, to consume food, to provide food. Every now and then I have a culinary experience that is different, it stands out above and beyond just another restaurant visit.
I got to experience that last night. I was hungry after a tough day on the highway. My only options that were still open were national food chains attached to truckstops. Fast food. But also, Indian Curry and Kababs. I called to confirm that they were open. I took off on foot and arrived just as they were closing up.
Chef Dos invited me into his kitchen and cheerfully prepared an amazing bowl of chicken curry. Watching a Foodie prepare a meal versus a cook is a sight to behold. Chef Dos loves what he does. I could tell in the way he handled the food and the smile on his face as he did it. I got to see his tandoori oven inside the food truck. He was so happy to share information about it with me. He talked about his food the way that a guy would talk about his first kiss.
By the time that he had finished and packaged my meal, I knew that I was in for a special treat. Above and beyond I got to witness somebody prepare, provide, and talk about food with love and passion.
I did not only get a bowl of chicken curry, I got a new friend.

Read moreI am not kidding you, this is the best, not only Indian food, but best food I've have ever had in general. We stopped here on a whim, and boy are we thankful we did. My 12, 13 YO kids were hungry and they are reasonably adventurous eaters, so they were happy to try this over fast food. The Chef said he'd make something special for one of my boys who has issues with gluten. My son LOVED his meal, as did my other son. We ended up with a Curry dish I am not sure if I ordered or not, but thought, "maybe I am a little hungry" and ended up devouring the meal. We've eaten a lot of Indian food, and, my kids, and wife all agreed, this was by far the best we've had.
After we finished eating we all wanted to thank the Chef for the great experience. He was very appreciative of the feedback and he seemed very happy we enjoyed his cooking. There is no doubt the food is freshly made to order - please be patient, it does take a little longer than a typical food truck. We waited probably 15 minutes. Visited the small town of Maryhill as part of a scenic drive and found this gem of a food truck. They also have restaurant style seating indoors and outdoors.
Food is delicious and this place is a must visit.
Tried their paneer butter masala, garlic naan and samosa for dinner and loved it. Special shoutout to Gaurav Kainth who was a great host. He also recommended some things to do around Maryhill and helped with the day 2 itinerary.
In the morning, stopped here for breakfast again. Chef Pritam suggested to try their mixed paratha- it's the best paratha ever, better than anything I have eaten back in India. Chai was outstanding, large cup for just $3. Later in the day visited again to get mango Lassi for the drive back - it was thick and delicious. Also got to go samosas for the drive back, coz you guessed it, their samosas are amazing too.
