1-16-2022 As i sit here thinking about a long drawn out review for this steak house i just don't have the time to do so but i'll leave you all with this...
tonight was mine and my wife's 12 year anniversary so we chose to try out a top rated steak house to celebrate. my 20oz ribeye ($46) was the worst cut of meat i have ever seen and was supposed to be cooked medium. I ended up with a large charred piece of fat that was instantly raw under the charred outside....... 0 and I mean 0 flavor! So much that i had to ask for steak sauce (which must be normal judging by the waitresses response). Moving on to the Moscow mule I ordered was heavy on the ginger and no vodka. My wife ordered the lamb and it was also under cooked from what she requested. The salad bar was very basic but the cottage cheese was good which is why I'm giving a 2 star review and not a 1 star! The waitress seemed pre-programmed and left little to no time to serve us better. Not what I expected for a $100 dinner.

I am surprised you even responded but offered no solution to your poor service and sub par dinners that were served to us last night. I can honestly say we have had better food and service from Applebee's which is sad. maybe the cook and waitress were having a bad night due to a sh*tty work environment which is understandable considering what I am seeing from the overall attitude coming from the the owner towards paying customers!!!
As far as the done chart for the steaks on the menu.............. YES I did see them and made my choice accordingly for MEDIUM not charcoal briquette on the outside and absolutely fu*king still alive on the inside!!!!!!!!!! I hope that cleared...

We both asked that our steaks be cooked medium (and there is a very nice guide on the menu for what is "medium", "rare", "medium well", etc. First let me say that the staff was efficient, polite, and pleasant; and the salad bar was good, as was the fresh warm bread in the warming drawer. We were fairly early for dinner ~5pm and the place was not at all crowded.
So all was going fine until our steaks arrived. My wife's steak, ordered medium, was way over cooked. It was "well" done by the restaurants own menu guide. Mine looked to be cooked medium as ordered, but sadly it was the toughest, most gristly piece of meat I've had in a long time! And it tasted a bit gamy too. Not at all what I expected for a filet mignon! Though overcooked my wife's steak tasted better. At a steak house I would have expected all of the beef to be prime or as least choice. Mine seemed standard grade or even less than standard.
We didn't want to make a fuss, nor wait to have our entrees remade, so we didn't complain, and basically made the best of a bad situation. I have to say the standard fair at Longhorns, Outback, and Texas Roadhouse grill all easily top our experience at Cattleman's Cut. Given it was a 40 year old steak house, we expected to be wowed. I ordered the 20oz boneless ribeye ($44) with the sweet potato with pecan butter sauce, and the salad bar. I had just started to eat my salad when my server came by my table and said my food was coming out. I thought, okay that was fast! I had a couple more bites of salad and there was the steak. I had a couple more bites then dug into the steak. I ordered medium rare. It was just over rare, and cool. The hot plate it was on wasn't even warm. The potato was warmer than the steak. I ate the potato and the server hadn't come by to ask how it was so I stopped another and asked her to get my server. Mine was bringing out another table's food but came over right after. She said it was her fault as my steak had come up before I had my salad so she had set it off to the side so it wouldn't be under the heat lamps. I'm sorry, but for $44 for a steak, I hope for better timing! She took it back and within two minutes came back with a sizzling plate. It was like the chef just put it on the hot plate. The taste was bland at best. Like I said before, there is a seasoning shaker by the salt and pepper.
