We visited Untamed in early June and had an absolutely incredible experience. Our Airbnb host recommended it, especially the Meyer Lemon pizza, and we’re so glad we listened (well… mostly listened).
On our first visit, we were greeted by a fantastic server. I think his name was Tom—apologies if I got that wrong. He was energetic, engaging, and shared the fascinating story of the Sanvido family, which completely captivated my husband and me. We did a tasting and immediately fell in love with the wines. One wine in particular was suggested as the perfect pairing for our pizza, and we clung to that glass like gold.
We didn’t follow our Airbnb host’s suggestion of the Meyer Lemon pizza that time, because we couldn’t resist trying the South African Summer. And wow. Let me just say, I grew up around pizza. My dad owned pizza shops for 25 years, so I consider myself a bit of a pizza snob. This one blew me away. It’s no surprise they’ve won awards. And fun little twist: the conventions where they earned those awards are the same ones my dad used to attend. It was a full circle moment.
Of course, we became wine club members that very day. The wine was fantastic, and I knew I’d be dreaming of that pizza every time we planned a weekend getaway to Fredericksburg.
And wouldn’t you know it, we came back this past weekend. This time we tried both the Meyer Lemon and Fancy Fungi pizzas. They were delicious, but I have to say the South African Summer still holds the crown for me.
Even better, we brought our pup along and he was treated like royalty. Big thank you to Lezli for taking such great care of us. Your recommendations for dinner and things to do afterward were spot on, and your warmth made our visit even more special. Thank you for loving on our sweet (but admittedly intimidating-looking) dog, Mojo. You made us feel right at home.

Read moreWe came to Untamed this weekend on the recommendation of a stranger, and left with a handful of new friends.
We visited Fredericksburg with the plan to relax and drink wine, but no real roadmap beyond that. After some really unfortunate treatment at a larger, established winery (rhymes with Drape Greek), we were angry and in desperate need of a Texas winery experience we could fall in love with.
When we drove up to Untamed, we knew we were in for something amazing, and everything, from the initial greeting at the door, to the beautiful setting and architecture, to the incredible made-on-site pizza, to the warmth and knowledge of the tasting guide Anouska (she was fantastic -- we will return just to hang out with her again), to the friendliness of the owners (and their awesome dogs!) was next level. And I haven't even mentioned the wines yet...
The wines were on-par with some of the best we've tasted in Napa and Sonoma (and there have been plenty), and were head-and-shoulders above the other Texas wineries we've visited. They range from delicate to bold, but each carries its own balance and complexity, guaranteeing that this now-small, young winery will not stay that way for long.
I don't know that we will revisit Fredericksburg to go to Texas wineries again, but we will absolutely revisit Fredericksburg specifically to taste at Untamed again. And to hang with Anouska, Dane, McKenzie, and the crew.

Read moreI recently visited Untamed Wine Estates in Johnson City, and it was an absolute standout from start to finish. From the moment we walked in, the atmosphere was inviting, and the entire staff made us feel welcome.
The wine selection was fantastic—each glass we tried was well-crafted and delicious, reflecting the passion that goes into their winemaking. The tasting experience was made even better by our server, Tom, who was knowledgeable and engaging without being overwhelming. Spencer also assisted throughout our visit, and both of them, along with the rest of the team, made the experience even more enjoyable.
Of course, the food was just as impressive as the wine. The charcuterie board was beautifully presented, packed with a great variety of cheeses, meats, and accompaniments that paired perfectly with our drinks. And the pizza—wow! The flavors were fresh, and the crust had that perfect balance of crispness and chew. It’s clear they put just as much thought into their food as they do their wine.
The venue itself added to the experience. Whether you choose to sit inside or outside, the ambiance is relaxed yet refined, making it an ideal spot to sip, snack, and soak in the surroundings.
