Their brisket, chicken, barbacoa, carnitas and sausage links are smoked to perfection and come with all the best sides—house‑made rice and beans, creamy potato salad, and mouth‑watering jalapeño poppers—plus you definitely don’t want to skip the banana pudding for dessert. If you’re from Los Fresnos and haven’t stopped by, you’re definitely missing out on what many people from all over the Valley and even upstate have been coming down for. My personal favorite for breakfast is the David & Goliath taco. For lunch, I have a solid rotation going with the Brisket Nachos, Loaded Spud, Taste of Herm’s, the Last Supper taco, and I always need a little something sweet after - the banana pudding. And trust me—they do NOT hold back on the meats. Every time I go or send someone else to pick up Herm’s, it’s ALWAYS a GENEROUS portion.
Apart from the GREAT food, the owner and employees are all GREAT people as well. Joseph, one of the employees, always stands out in my opinion. He’s eager to take your order, patient in answering any questions you may have, and always maintains a positive attitude.

Outside of the great reputation in the community, Herms Smokehouse also has exceptional quality of food to choose from. What you also notice is the quality of meats used to prepare his menu items. Today I had a Holy Roller, a jalapeño cheese sausage link, and a pound of barbacoa. The holy roller was amazing; decadent brisket with a perfect amount of melt in your mouth fat, balanced seasoning that allows the quality of beef to shine, crispy bacon, and awesome beans. The sausage link was fantastic, great balance in meat to fat and the cheese and jalapeño were proportioned just perfect for creamy, melty, heat. Last but not least the barbacoa... no nonsense here. 1 lb full of meat. No chunks of fat or swimming in grease like some other vendors, out of this world flavor and texture.
