I lived in Lubbock for a few years when my wife was in law school at Texas Tech. There were not a lot of choices for barbecue. Our favorite spots were Rudy's and Tom & Bingo's BBQ. Tom & Bingo's was included in the 2008 Texas Monthly Top 50 BBQ list. They only smoke brisket, ham, and burgers though. DV featured them in a recent article on BBQ sandwiches. I only ate J & M Bar-B-Q & Catering once when we lived in Lubbock and thought it was good. We were in town visiting because the wife's family still lives in the LBK. I only had time for one BBQ joint on this trip so I had to make it count.
When you walk in, you think you would order from the counter, but you actually order from the menu at a table. You do not get to see the meat cut in front of you. I ordered the three-meat with moist brisket, pork ribs, and German sausage. The sides I got were coleslaw and macaroni and cheese. The Certified Angus Beef logo was displayed everywhere on the menu so I assumed that they were using a better brisket. They were better off using a lower grade of beef. I ordered fatty and got lean. The waitress charged me for a quarter pound of moist to get my order "right." It was like eating dry pot roast with smoke for both types of brisket. There was no bark and the fat was rendered away and/or trimmed away. The moist fell apart when I picked up a slice. As you can see below, I ate everything but both cuts of brisket. The pork ribs were solid. The dry rub combined with the smoke made them tasty. The ribs were very tender. The commercial sausage was just okay. You could probably find something similar at the grocery store. Nothing special to note about the sides, but I did eat it all because I was hungry.
I had no idea what to expect in this visit so I came in with an open mind. I am pretty sure I would not be going back to J & M Bar-B-Q & Catering even if I lived in Lubbock. I personally have worked at this establishment twice, most recently last week. J&M does the majority of their business by catering, whether they be private events or companies that provide luches etc. (And when i say majority I mean I have regularly seen several orders of more than a few thousand dollars.) With that being said the service nd attention given to the customer when in the store is minimal at best. Most likely it is not the servers fault, but more a collective result of the employees,: FROM THE OWNER TO THE DISHWASHER, not makoing custopmer service a priority. I have seen managers clock out and leave while having a lunch "rush", been told that I must make sure the kitchen knows that they have a ticket, and made hundreds and hundreds of cups of ice to be used or catering; all while making 2.13 and hour and not much at all in tips. When I voiced my concerns that effected customer service to the owner he was not only unreceptive, but reiterated the bad practices that directly related to the customers experience. When I did decide to leave the job while waiting to transfer an open check and hand in my one cc receipt i was asked by the owner "Why are you still here?......
Barely making minimum wage coupled with company culture and the complete lack of care about the customer, the value we offer to them, the service they are given, etc etc they will never be able to keep a dependable person who is also a STRONG SERVER. And furthermore, I do not foresee a situation in which the concern for the experience of the customer is made a priority, ever.

Order two Brisket combos My husbands coleslaw was old, corn 🌽 dried out. He ordered second extra side for himself. My combo was missing french fries
She forgot to add my fries to combo and blatantly accused me of lying that I did not order French fries with my side. When after I repeated my order twice. She must have ear wax of decades. Because i gave my order repeated i wanted fries... twice]!! Because she huhhhh.
Someone please 🙏 let owner know that the fat rude blonde is very unprofessional and this is😤 so weird that she would argue with me instead of saying " sorry ma'am I did not hear. But I have to charge"... Or could have even apologized period. But instead accuses me of trying to get something free. So I just went acvery very ross the street and bought a 5.00 large fries from kcf. Matter of fact she closed the window in my face twice and hung up on me 3 times when I asked to speak with management. When i called between 7:00-7:15
