Update July 2025: Still 10/5 stars on everything! First time visiting again since Helene, and somehow they've gotten even better. Ingredients tasted incredibly fresh, they're as friendly as ever, and they got a few more seats. Not only are they fresher than any other noodles you'll find in Asheville, but since they do all-inclusive pricing, they're cheaper than any other noodle spot around here. Go give them a visit, you'll have your mind blown! (Last 2 photos are from this visit) Original: I've been wanting to try these noodles ever since he first started doing pop up nights, and never was able to. After the long wait, got to try them tonight now that the brick + morter is open. WORTH THE WAIT. From the second we got there, including the time spent outside standing in line (counter seating, they don't take reservations or have a waitlist) it was a great time, the people there were there to enjoy the dinner experience. It feels like you're there to enjoy a meal with people rather than going out to eat. Everything is done in full view of where your are, so can watch your noodles being made from scratch, beautifully plated, simple but elegant. The noodles were phenomenal, the best noodles I've had in the asheville area, and probably the best quality I've had across denver and Minneapolis (which both have incredible ramen options). As you're wrapping up with your food, they made us fresh donuts as well which were so amazing, was thinking it'd be worth the drive to Marshall on a morning just for those. From start to finish, I couldn't have imagined a better experience. Thank you so much to the owner and the wait staff that helped make this such a warm, inviting atmosphere, and for the noodles themselves, thank you šŸ™šŸ»

The hand pulled noodles are vegan friendly, and for gluten free folks there’s a rice noodle option. If you are vegan you can do the veg soup with tofu, hold the egg. Which is what I did and it was great. The house made chili oil is *not to be missed*. Dessert (as everyone has noted) is always a perfectly cooked donut (not vegan, but Hole their donut shop in Asheville low-key does vegan donuts on Mondays.) Last - love the little games they leave out to play! I had to google image search the two player game šŸ˜‰ Notes: Dine in only, limited seating, already a line when we arrived 20 mins before opening.

The menu is small and perfectly executed. The night we went, there was an add on pickled cucumber appetizer, noodle soups were beef or veg (tofu/vegan) with the option to add a soy egg, and a donut. My partner and I each got our own pickles, he got the beef, and I got the veg. Everything was delicious and felt like such good value. The staff are also lovely. The space is small and there might be a line, be patient and you will be rewarded. I was too excited to eat so only got a picture of the cute decor.
