Fat & Happy BBQ — Restaurant in Memphis

My Husband and I were driving down to Houston for some family business. As we were driving through Amarillo, Tx, looking for something to eat, and nothing entertained our taste buds. A little of an one and half hour of driving, I was googling places to fill our empty bellies. Well, Fat and Happy BBQ was at the top of the list. So I told my husband to stop at this road stop food truck right near Love’s truck stop. And , well worth the wait to fill our bellies from driving 11 hrs straight. We both had the brisket plate with sides. The mesquite smoked beef brisket melted in your mouth. There was a side of bbq, but it’s not needed. Maaaaaan these reviews aren't lying! We're traveling for work, just passing through, and there's not a lot of options out here. We stopped here because of the reviews. When it comes to BBQ, I'm very picky. A couple weeks ago I told myself I wouldn't be trying another BBQ spot after finally trying one near home, after 5 years of living there, and it was trash! But Fat and Happy BBQ did not disappoint!! The catfish was the best catfish I've ever had, the ribs were perfection, same with the Mac n cheese. Now, the potato salad... The great state of Texas has a well deserved reputation for many things, including BBQ and specifically brisket. The one area of barbecue where Texas has disappointed me are the pork ribs. I’ve had a few duds. Not here. The ribs are smoked and finished perfectly. The Carolinas, Kansas City nor St Louis would look down upon these ribs. Note how the meat has pulled back approximately a half an inch from the end of the bone. This is a good barometer. I have enjoyed the brisket, ribs and pulled pork here. The sides are quite good. This man’s potato salad shouldn’t even be legal. It’s that good.
