Authentic Japanese food in minimalist aesthetic setting, cleanliness and care clear, with imported pottery (and tea...and ingredients...) made by two amazing chefs (who also serve!!).
Had omakase bowl $39, tuna bowl with ochasoba (15ish, I forget), miso, green tea, mochi all $2.5ish (rasp, choco, passion fruit -our fav!) Free citrus water avail
(This was enough food to stuff 2 people - including 1 hungry husband)

Having been to Japan and lived in NYC (and tried to eat at every Japanese place in the tri-county SoFlo area) - I can say that the omakase bowl was THE CLOSEST TO JAPAN I have been since returning to the states (tied maybe with Sushi Yasuda in NYC which is $$$$ and was $50+ for lunch)
100% would be a regular if I lived close-by (hope they open a FTL location or pop-up) - looking forward to doing the omakase box for special events in the future.
The only warning/negative things I can say are (nothing about food or service, and complete nit-picking it really is 5/5!): -its a drive (we're in FTL) -hard to see from road, even with Google Maps - we drove by...2x (thus photos below of area instead of food. GMaps, Insta, and Yelp have tons of beautiful wabi-Sabi food already - yes, it really is that beautiful in person) -minimal parking / practice your 3-point turn or do curbside (they'll bring it to you!) -I was spoiled by Japan and NYC restaurants and kinda hoped there would be a Totto toilet (and also Japanese junk food, more sweet tooth desserts...anmitsu, daifuku, etc, but the mochi was delicious and there were 6 flavors avail and...

I spoke with the hostess and was told that they were completely booked. I was not aware that they were an ‘reservation only’ kind of restaurant, so I completely understood. I told her it was fine, I did not want either of us to stress out over this situation and would gladly return another day with a reservation. But right before the conversation ended, a table opened up and she offered it to us. Of course I would not have passed on that offer and within minutes we were seated. We were incredibly excited and waited eagerly for our dinner to arrive. It was sadly short lived as a suited gentleman asked us if we had reservations, then told us that our seats were reserved and we had to leave. I knew it would be difficult to find a place that would be accommodating with all the restrictions of whole30 but Wabi Sabi was the right choice. The woman that took my order over the phone was so kind and friendly, I’m used to poor customer service in Miami (especially when you ask for things to be made differently to accommodate food sensitivities) so I was really surprised she was so kind and willing to help me find something that would work for me. I ended up getting salmon over one of the salad bowls— it was fantastic! So much flavor!! Since their typical dressings wouldn’t work for whole30 she gave me Yuzu juice concentrate which was fantastic as a dressing. I did not dine in, but when I picked up my order the insde was tastefully designed with an open kitchen. The woman who took my order was even more pleasant in person! A perfect birthday lunch.
