The Dehydrated Strawberry Frozen Aperol Martini was a symphony of flavors, with Bison Grass Vodka adding a subtle herbal note. Beet pancake with caviar and chive was a sweet and savory delight, paired perfectly with a Rum-based cocktail. The curry, rhubarb, and pickle basil foam with oyster and sugar snap Pisco Sour was a masterclass in balance. Scallop ceviche with Mezcal, poblano juice, watermelon, squash seeds, mint, and frozen feta was refreshing and bold.
The Lobster escargot paired with Champagne was decadent, while the Salmon roe, crispy salmon, and regular salmon with Benedictine and sesame oil was a delight. Spicy tuna with Green apple juice and sherry was the standout pairing for me. Chorizo wrapped in date and studded with Manchego, served with pickled daikon and soju, was a sweet and savory treat.
Pork BBQ with fried kimchi and Wasabi-infused sake was a spicy kick, while Shisho leaf, grilled hamachi, and wasabi peas with Tequila and sour sap was a masterful combination. Strawberry and yoghurt with dehydrated lamb and freeze-dried feta, paired with Ouzo and carrot juice, was a surprising delight. Mexican street corn with tamale flavor, featuring tamale with shrimp and chorizo, was comforting.
The Chicken waffles with Mike's Hot Honey and Pisco Sour was a sweet and savory treat. Rum infused with lemon paired perfectly with lemon cookie and ricotta cheese, while Pink pepper, corn, and fennel pollen with Limoncello, Creme de cassis, and rum was a refreshing finale. Slow gin with peanut powder and gin with gooseberry was a delightful ending.

However, there is one thing that definitely needs a huge improvement. And that was the service. We have been serviced by the owner of this place and he has been one of the most arrogant people i have ever came across in my life. He was so disturbing that, we as a group of 3 wanted to leave even before the experience ended. He was such a mood killer. We felt afraid to speak between each other about the food we tasted because we were speaking in our native language and he seemed very uncomfortable that it was not in english. Not suprisingly, the people he interacted the most and showed his best behavior were the 2 english speakers among a group of 9. I don’t expect him to talk to me all the time but when he does, it shouldn’t be in a way that makes guests feel uncomfortable about themselves, given that there was no negative behavior we have shown. There are so many details like this that occured throughout the experience.
In omakase experiences like this, which you don’t call an experience for nothing, the thing that matters is not only the taste of food itself. The quality of the experience is determined by the feelings you are left with, which is influenced by other things also, such as the service, the attitude and so on.
