I used to live in the area ; was up visiting family and I stumbled on this place by way of an IG reel so I figured I would give it a try because (a)-it was the Friday that NJ experienced a 4.8 earthquake and I most certainly didn't think I was in the right headspace to do any cooking and (b)-this place was literally 1 mile away from my mother's house so I figured I'd pay the extra overhead and have it delivered because it was so close.
Let's get the con out of the way; despite me putting my address in and stating where I lived the food was never delivered. I received prompt notifications on my phone about it being almost ready & that it was on its way..but I literally was standing in front of the single family residence and received a text that my food was delivered but it wasn't. Not the best first impression..
When I called the establishment Chelf Salty communicated his dismay and stated he would remake my order for in person pick-up; I appreciated his effort to make this right so I agreed.
I'm glad I did. I ordered the spicy miso ramen, the tori katsu ramen, and the stamina ramen (was sharing with mom). The spicy miso ramen has a nice kick, the ramen noodles have a good chew and the pork confit was silky. Katsu ramen and stamina ramen though brothless had great balance of flavor between the amazingly dressed noodles (again nice kick in heat/flavor that wasn't blindingly spicy), perfect jammy eggs and the the chicken katsu was DIVINE..perfectly crisp..juicy..and again..great balance of flavor in the chicken.
If you don't feel like getting in your car to drive to a ramen place and just want to tuck into some yummy ramen at home do give this place a try..I'm glad I did. Is it the best ramen I have ever had in my life? No..but I think it holds its own with the other ramen places in Essex county and again..I think it's a great option for the peeps that live in Nutley/Belleville area that just want to tuck into some good comfort food that isn't pizza or...

HOWEVER, this Ghost kitchen can accommodate Private small parties with reservation. You will be served by the chef and be able to see him first hand prepping your order. Chef has an amazing personality, and gives you and your party enough space to engage with eachother. It's a unique, and intimate experience. Perfect for 2 people, and can accommodate more if you reserve! Also! There's a no tip policy which is UNHEARD OF!
Food: We had the honor of dining in so this experience gave us the freshest and quickly served dishes!
Starting with the trusty old Edamame that was delicious and finished with his signature drama oil and furikake!
Chicken Karaage Bao: The crunch and juiciness of the chicken thigh on this bao bun is worth the buy, ESPECIALLY if you dine in. You won't get em anymore fresh than that and the scallions just give it a beautiful freshness.
Original Miso Spicy Ramen: So I'll be honest here. I'm someone who has gone to all the big name ramen spots in the city and i have always left the broth. I prefer lighter broth. This Miso Ramen, I sipped the last drop of broth. The flavor, salt levels were great and the combination of pork and chicken broth give it a lighter feel but retains a just right amout of richness for my taste!
If you're someone who loves a hearty broth. I STRONGLY recommend the Signature Tonkatsu Ramen! It's got the exact richness that Ramen lovers crave in a bowl! The noodles on both of them, slurp worthy and cooked to perfection
Overall Service: It's an amazing meal for anytime of day, and with its doordash, uber eats available it's quite accessible for ordering! ProtipBest rates are available through his website Sitting in was really nice (Don't forget you have to request a time to eat in) service was quick, conversation was great and the food was incredible! Will absolutely...
Read moreThis is ramen place. No not the other place you thought was your ramen place. Here. Casey is your owner, host, and chef. I don’t know where people, maybe TikTok, got this idea ramen is suppose to be fancy and full with other flavors and textures that take away from the ramen. It’s not. Stop listen to those people. Let Casey remind you of what ramen, like those from ramen-ya, is suppose to be. His Tonkotsu is literally a perfect warm comforting hug. His pork dumpling is perfect. Seared bottom, semi crunchy top, soft in the center. As a Korean I mean this with every fiber of my heritage, simple amazing flavor is a ramen that is a lot harder to perfect because you can hide behind other things thrown in. At 47yo I am not sure if Casey has a perfect ramen but I can say this, it’s ruined me. We have two good places back home that just dropped down to below college noodle cup in the microwave because of Casey. I envy any of you that can just drop in and have a bowl, like Sam. Envy and jealous but it’s ok because when we come back around the area, where to have dinner is a no brainer. Any night I am in the area, easy pick. Thank you Casey and this family will see you...
