Long-term customers, but the service and quality have been extremely bad the last few times we’ve been there. In the past year 7 out of 8 orders have been missing something, cold, incorrect or just plain bad. This is Valentine’s Day, 2018. I know it’s a busy day. We called in our order and saw similar orders, that are said to take 30 minutes, go out before ours with people who had just placed the order at the counter. The young woman taking payment was really rude when I asked about the delay. She said it was busy and it took a while for the Chicken Parmesan sandwich because they can only put so much in the fryer at one time. I might understand that but the chicken was cold. I asked for meatballs with the Gnocchi and received sausage. All the food was cold and the way it was package left a mess, with most of the sauce in the bottom of the plastic bad instead of on the pasta. My wife’s family has known the Collette family for decades. That’s why we keep coming back. But, it’s getting to be very few good orders with a bunch of mistakes. Staff look confused like they haven’t been trained. It is sad to see Collette’s, an icon in Pueblo start to slip into the realm of all the run of the mill, horrible fast food places in town.
I don’t mind an apology for being busy, but the staff seem to have fallen into using lame excuses, that seem like outright lies, when asked. I have fourteen years in working restaurants in every phase and I’d be ashamed to have service and quality so low. I was also told that if I wanted my order to be ready when I got there I had to make sure to say, “Bagged and ready to go.” If they say it will be ready in 30 minutes, why should I have to ask for it to be ready in 30 minutes? If they said an hour, I would have showed up in an hour. Either way, I should have my order ready within a reasonable time after arrival. Yet, they only start on the meal when I get there. They are saying customers shouldn’t call ahead because walk-in customers seem to get preferential treatment.

Read moreI have been going to Collette's for years. This is the 3rd time that I walk in and the Male Owner, is very rude. He acts like the people coming into his establishment are bothering him. Yesterday I spent well over $30 , however I walked in today to get a salad and some bread to finish our leftovers from dinner. I asked how much for the bread.....40c each...ok can I please get 4 with my order. "Nope I can only sell you one and really I shouldn't be selling you any as my supply is short." I told him I was willing to pay," Nope not going to do it." I have to save my bread for other customers" (Customers with bigger orders than just a salad!!! Needless to say that I walked out without food. Boy I tell you this owner is the most rude person in Pueblo I have had to deal with and I will no longer give him my business. He even had to balls to tell me that if his other customers came in later and there was no bread because a lady earlier in the day wanted to purchase some, he would feel bad for his other customers. He mentioned that He had to pay a premium price to drive to Safeway to pick up the bread, and I told him that I too paid a premium amount in gas to drive to his establishment to purchase his food. Maybe I didn't spend money on a bigger order today, but in the past 30 years I have spent plenty there and I don't agree that because you have other customers later in the day, you should turn that one person away. He doesn't realize that there are better food places than his in Pueblo. There are plenty places to enjoy better food. I will give my business to the other food establishments here in Pueblo who actually care about the people coming in to support...
Read more5 stars is not enough, wish I could double it. We ordered catering from them for 80 people to pick up on June 1st. I have to tell you they were spot on on the pick up time and they loaded it in my vehicle for me ( thank you for that) When I got it home out in Pueblo West the food was still very hot like it just came off the stove. The chicken was perfect, the pasta was perfect the noodles weren't over or under cooked they were just perfect, the meatballs were done just right. I know they make there sausage in house and I have to say it was amazing it by far was my favorite. The price we paid was well worth it. Thank you so much for taking the cooking stress off of us. It made our kids graduation less stressful. I can't say enough about this place. Will definerly order from them again and i will recomend them to others. The only regret I have is I have lived in Pueblo all my life and this is the first time having them. Now I am going to have to make the drive from Pueblo West just to try their carry out.
