Our dining experience at PALIO – Wyndham Rio Mar was nothing short of exceptional, thanks in large part to our waitress, Luzbeth, whose recommendations made the evening truly memorable.
My wife began with the Burrata, which was incredibly creamy and paired beautifully with the accompaniments. Her main course, the Apricot Lamb Chops, was a standout—succulent, tender, and wonderfully balanced with the sweetness of apricot. The meal ended on a high note with the Tiramisu, a classic dessert elevated by the coffee-infused lady fingers and rich espresso anglaise.
I started with the Local Oyster Mushrooms, which were earthy and flavorful, setting the stage for the main course, the Caribbean Lobster Carbonara. This dish was a masterful fusion of rich, creamy pasta and perfectly cooked lobster. I finished with the Chocolatissimo, a decadent dessert with layers of hazelnut mousse and a luscious chocolate sauce that was the perfect end to an outstanding meal.

My husband ordered the catch of the day (snapper if I recall) and he loved it. Both were served with tortellini beneath the entrees. We split a bottle of wine which was $55 but very good. We also got the lobster bruschetta which was okay. $17 for the appetizer but you barely got any lobster and it was loaded with onions - and only three pieces. We started with the rosti with beet salmon gravlax and it was perfectly displayed and the taste was sublime. It was followed by a rose petal maracuyá sorbet that cleansed the palette to get ready for the entree. We chose the petite fillet mignon.
