I've eaten at Pedalers once before and the food was really good. I'm giving a two star because this last time I went, admittedly during the lunch rush, I walked out after seven minutes of standing in line. There were three employees in the deli, one staffing the register, one staffing the Icycle Creamery case, and one making sandwiches.
As I stood in line, despite the staff member making the sandwiches was the only one making sandwiches, the person on the register just stood there, as did the person behind the ice cream case (that person was offering ice cream samples). To top it off, the staffer making the sandwiches wasn't exactly fast, standing at the sandwich press for 30 seconds while the pressing was happening, instead of turning around and working on another sandwich during the dead time.
There were five people in line in front of me when I entered. In the seven minutes I was inside, only one person got their sandwich, and when I left, the next person's sandwich was in the press. I was timing the process, (roughly 4 min per sandwich) and concluded it would take another 12-15 minutes before I would get mine. Overall, that would have been a 19-22 minute wait. When you have only a half hour lunch, that is unworkable.
Peddlers management, if you read this, please take some action to improve the process during the lunch rush. I'm fully aware of the ongoing staffing issues most businesses are having, but to have two people standing around while the third person is the only one making sandwiches during the lunch rush is just baffling.
I will try Peddlers again (as the food is good), but it may be a while...

When it comes to the food, my best bet is the Silk Roadie. Curried chicken salad on fresh baked bread is just ... great. The sliced green grape in the chicken salad is really what makes the whole thing sing.
Onto the most important part, the ICE CREAM.
First off, it is all made with non-homogenized milk from the local Sand Hill Dairy. What this means for you is exceptionally smooth, clean ice cream that even many lactose-intolerant people I know (myself included) can eat without any problems. This milk is also high in fat content which will leave your mouth with a nice, balmy finish. Don't be put off by that; it's actually a good thing and you've been warned.
Second, the flavors: the many many many flavors. This guys churn out unique flavors every week. And I'm not talking just flavors you would come up with as an 8 year old. I'm talking Zabaglione - marsala wine, olive oil ice cream made with oil direct from the owner's family in Sicily, lemon licorice swirl, Carolina Barbecue, Earl Grey (a favorite), molasses, honey-butter cornbread, etc. Even one of their 4 standard flavors, "Home Means Nevada" (sage and pine nuts), is a unique creation that you cannot miss. If you're into biking, you'll fall in love. Speaking with Juan, he was telling me that he makes all the ice cream right in the back of his shop, everyday. With new flavors everyday, along with a new cookie everyday. Everything is organic. There isn't any artificial flavoring. You tell by looking and tasting. He wanted me to taste all the flavors for fun. All of them were bomb.! Of course, I got the affogato with the honey butter cookie cornbread ice cream. Let me tell you, some of the best espresso I've had yet.
The sandwiches.! My first bite I wanted to swallow the sandwich whole butttttt at the same time I wanted to savor every single moment with that sandwich. The jalapeƱo cheddar bread is absolutely to die for. Especially toasted. The bacon put on there was cooked perfect. All the flavors tasted fresh and taken care of.
Overall, this spot is my favorite sandwich shop. First impressions matter and Juan's first impression is unforgettable. He cares about the food. He cares about what we are consuming as people. He makes sure everyone is taken care of, even if he thinks he walks away from you and he doesn't. Lol. Try it. It's worth every...
