Let me start by saying the service is fantastic, very friendly and welcoming upon walking up to the food truck. I had studied the menu a bit before arriving so I know what I wanted.
I ordered a monte bianco pizza and a double pepperoni. I didn't know that the monte bianco was a "white pizza" meaning they don't use a tomato sauce base for the pizza so I was very relieved that they clarified that for me. I opted for the tomato sauce base and added pepperoni to the monte bianco.
There were a couple orders ahead of us, so we were able to grab some ice cream while our order was being made. My niece asked, "how is it a healthy pizza??"
Well for starters the pizza is incredibly "light". It's definitely on the thinner side if you're just used to chain pizza. I definitely could have ate the entire pizza without feeling overwhelmingly stuffed and bloated.
We had about a 15 minute drive home so we didn't try the pizza freshly out of the oven. Personally I think the pizza was a little floppy, while the toppings didn't slide off the pizza, I caught my self trying to catch a bite and not leave it to chance. But the ingredients are definitely fresh, and the owner gave us the courtesy of taking the pizzas to our car when they were done.
There are a couple picnic tables available if you'd like to enjoy your pizza there. I'm not necessarily sure if it's for me, everything was great, but I just would have liked for the bottom of the pizza to be a bit toastier without the flop.
But if that isn't an issue for you then I recommend giving them a try.
I look forward to trying them again once they outgrow the food truck, I'm sure they'll be well...

The crust has a perfect light char and airy texture. The sauce tastes fresh and balanced, not overly seasoned, allowing the natural flavor of the tomatoes to shine.
What makes it exceptional is how closely it matches the style of top pizzerias in Naples and Rome. It’s not trying to be “Valley pizza with Italian flair”—this feels genuinely authentic. For anyone who’s experienced true Italian pizza, this spot stands out as one of the rare places in the U.S. that...
