I’ve been to a lot of hand roll bars, so my standards are pretty high. Temaki Bar in San Jose is decent. The fish was fresh, and both my fiancé and I enjoyed what we ordered. He liked the spicy tuna, and I liked the snow crab. I got Set C to avoid decision fatigue and added a langostine roll, which was also good.
The chef we had was super friendly and chatty. We talked about the plastic wrap they use on the hand rolls. While I get why they use it to keep things crisp when serving multiple rolls at once, I still prefer hand rolls served one at a time and without plastic. It makes for a better eating experience.
The vibe is casual, and they have a solid variety of hand rolls, appetizers, and other sushi dishes. There’s also a wide selection of drinks, including alcohol. Service from the wait staff was professional but a bit impersonal.

We enjoyed the upscale and trendy ambiance featuring a colorful wall of saki bottles that make an interesting backdrop to the center stage where hand rolling is happening. First time at a Temaki bar and the staff were helpful to show us the ropes. First off I must say, everything here is super fresh. We enjoyed the soup, both salads. The miso ginger dressing is yum! Potstickers are crispy and well filled with a good dipping sauce. Definitely try the edamame with truffle salt. Very tasty! Finally the hand rolls, we tried 6 different kinds. Spicy tuna, spicy scallop, jalapeno/cream cheese, salmon skin, hakaido, snow crab. Hard to say which was our favorite as they were all good in their own unique way.
