Fried chicken was never my forte as it was either too greasy and dry inside or too crunchy but moist inside. Chicken tenders was the only thing I could tolerate as no one could do like grandma could… until Gus’s.
We were referred to Gus’s by a new friend we met at the local adult convention. Whataburger was the common go-to for our friends but we didn’t want “the usual” - we wanted something new and damn it was good so good we went twice.
First day, Saturday, we bought a 2-piece plate and the sandwich for both of us as we were headed back to the convention thereafter. Steven or Stephen, forgive my spelling, was welcoming and helpful as well as the entire staff. Asking us about our spice tolerance and providing us with water while we waited for our order. Food is made fresh when you order and the wait is worth it.
Second day, Sunday, they were out of the chicken sandwich and we understood why. KJ was super helpful in helping us order as we still wanted a couple servings of their chicken and it was out second visit.
Flavor. The chicken is cooked in peanut oil as they said, which you can taste how light and delicious it makes the chicken. The crispy texture on the outside is met with the juicy inside of piping hot goodness.
Heat. When I say it’s hot, it’s smoking after the first bite. And we got takeout and drove 20 mins to the convention as well as socialized before sitting down to eat before the next panel show. It has a hint of spicy flavor as well that isn’t overwhelming. I can’t handle foods with too much heat, but their chicken was tolerable. Heat level between jalapeño poppers and Chester’s hot fries if I had to describe it.

The chicken was served piping hot, with a wonderfully crispy exterior and moist, flavorful meat. The portion sizes were impressive—I couldn’t finish my meal, and the breast and wing were especially large. The chicken had a great flavor, with just enough spice to leave a little heat without being overwhelming. Both the beans and slaw had a nice balance of flavors and paired well with the meal.
